Ingredients

    1 cup tempeh, cubed1/2 cup soy mayonnaise1 stalk celery, finely chopped1/2 medium onion, chopped2 tbsp fresh parsley, minced2 tsp prepared mustard2 tsp Braggs or soy sauce1 garlic clove, crushed and minced

Directions

Steam the cubed tempeh for 15 minutes on medium-high heat. Remove from heat and set aside to cool.

2. In a medium bowl, combine the mayonnaise, celery, pickles, onions, parsley, mustard, Braggs/soy sauce, and garlic with the tempeh and toss lightly.

Serve over toast, as a side dish, as a sandwich filling, or alone.

If you have trouble finding tempeh, you can use firm tofu, but it's not quite as effective.

Makes 4 servings.

    I cut the vegan mayo to 1/4 cup and added the juice of 1/4 lemon. Delicious! I served it over romaine lettuce and sliced tomato. ALSO PLEASE NOTE! The nutrition info is wrong. The recipe author ONLY entered about 1/4 of each ingredient, so the totals show 1/4 of the recipe. - 11/9/12

    Wow, so much drama over a simple recipe. If you are a die-hard omni expecting it to perfectly replicate actual chicken, YES, you're going to be disappointed. However, as a vegan, I appreciate this. Re: tofu confusion, you can make vegan mayo using silken tofu. Bonus - less fat than store-bought. - 4/6/12

    We LOVE this stuff! Try making my version and see what you think-- vegenaise, curry powder, a little vegesal (salt sub), cashews, and craisins. I have to hide this from my teenagers if I want any. Thanks to OP for letting others know how great tempeh is. - 11/17/11

    Wow this stuff us good! We can't get enough of it. We added one pickle to the recipe (since the amount isn't mentioned) and this has worked out fine. Also, in our second round, we cut the mayo in half, and still found it to be very tasty!! - 8/20/09

    Tempeh is fermented soybean. That might not SOUND too delicious, but I think it is amazing.
    This is making me wish I hadn't cheaped out and decided not to buy veggenaise when I was at the local organic store today.

    Does anyone else notice that in the instructions it reads to combine PICKLES but pickles aren't listed in the ingredients? Before I try to make this, can someone tell me how many pickles and what kind to use? - 4/9/08

    There is in fact a vegan form of mayo. One brand I know of is called Veganaise and it's made with tofu, I believe. You can find these in health food stores in a refrigerated section. - 4/9/08

    This recipe is from one of my favorite vegan cookbooks that I have been making recipes out of for years. It is a good recipe but you can cut down on the mayo and still have good results. - 4/9/08

    vegans don't eat corpses, so take your rude comments about chicken elsewhere please. there are HUNDREDS of flesh recipes on this site. Go try them and be respectful.
    There are several VEGAN Mayos out there: Wildwood, Nayonaise, Vegenaise to name three.
    (I too would cut the mayo in the recipe)

    Just to clarify, as someone who has eaten vegan in the past, there is vegan mayo available. I am not sure why there is talk of tofu when the recipe calls for tempeh.
    This is DELISH.
    This cookbook author and her work are GREAT! I have never made anything in her books that I haven't LOVE

    Incredible!
    To use tofu, first drain the tofu (extra firm) then freeze it. Freezing brings out a nice texture, similar to seitan. When you're ready to make the recipe, first let the tofu unfreeze, then cube & prepare as described. (I don't steam it.) Refrigerate after preparing. - 4/9/08
