Introduction

Ingredients

    2 medium (2-1/2" dia) raw onions
    2 stalk, large (11"-12" long) raw celery
    2 cloves garlic
    2 tbsp olive oil
    1/3 cup brown rice flour
    3 cup (24 fl oz) chicken broth
    1 large can (28oz) diced tomatoes
    1/4 cup fresh parsley
    1 tsp dried marjoram
    1 tsp ground oregano
    1 tsp salt
    1/2 tsp pepper
    16 oz (1lb) Tilapia or other white fish

Directions

In 12 cup casserole, combine onions, celery, garlic and oil. Microwave at High for 6-8 minutes or until vegetables are tender, stirring twice.
Stir in flour. Microwave at High for 1 minute; stir well. Stir in stock, tomatoes, parsley, oregano, marjoram, alt, pepper and (bay leaf if you desire). Microwave covered at High for 12-14 minutes or until bubbly, stirring once.
Stir in fish. Microwave, covered, at High for 10-12 minutes or until fish flakes when tested with fork, stirring once. Remove the bay leaf if you used it. Makes 6 servings.

    This recipe is fabulous! I made it on the stove and it was SO easy and delicious! My husband raved about it! I even added the tilapia frozen:) Only a few minor substitutions bc of my cupboard: thyme for marjoram, 2 T dried parsley for fresh, white flour, and added red pepper for a kick. Yum! - 3/27/13

    This was delicious! I only had two talapia fillets so I put a pound of shrimp in there as well. I served it with a few dashes of tabascco sauce for the adults. This will become a staple in my house! - 1/2/12

    Absolutely fabulous! I always cook on Sunday and today I was in the mood for seafood. I also made this on the stove; more control over the cooking process. In addition I used regular white flour, added 1 lb. of shrimp and 8 oz. mushooms. It was so tasty I ate 2 bowls! - 6/12/11
