Introduction

I came up with this simple, sweet, breakfast option because I couldn't face eggs every morning for breakfast. The cinnamon and splenda give the cottage cheese a wonderful, sweet flavor, and the chopped almonds give it a satisfying crunch. Ingredients

    1 cup 1% milkfat Cottage Cheese
    1 tsp ground cinnamon
    1 packet splenda (or other artificial sweetner)
    1/4 cup Almonds (chopped)

Directions

Combine cottage cheese, cinnamon, and splenda and mix well. Then sprinkle chopped almonds on top.

Makes 1 1 cup serving

    so glad I found you're recipe! Day 5 of SouthBeach and I couldn't stand the thought of eggs again, this hit the spot. I did add a splash of vanilla & 3 splenda packets and it was fabulous. I'm so grateful right now!!! - 7/17/11

    I love this, since my breakfast is between 5-6 am, it also saved me, as by mid morning I was starved. I added 1/2 c. unsweetened applesauce to mine and used stevia for the sweetener, So far the only breakfast, that I've been able to come up with that will hold me over till noon - 4/6/11

    Loved this; both quick, easy and simple, What more can you ask for in a healthy breakfast that's great for those late mornings, or any morning for that matter. Did not add the Splenda; did not see the need for it. Will also add fruits to it as well, since I love fruit with my cottage cheese. - 10/31/10

    Great idea for a quick snack or breakfast! I don't use faux sweeteners so added half a tsp of sugar, which I added to my nutrition tracker. I also added a dash of nutmeg. I might try adding vanilla next time. It is like eating rice pudding! Half a serving was plenty for me. - 2/10/13

    1-18-15: Added 1/4 cup Fiber One cereal for more fiber in this dish. Interesting flavor, but needs a little something more. Maybe experiment with different seasonings for savory vs sweet (this was not very sweet w/1 pkt Splenda, maybe add pineapple, too for sweet) - 1/18/15

    Not at all what I expected.
    It was GOOD! I'll be the first to admit "I don't like cottage cheese" but this tasted more like rice pudding. It was because of the chopped nuts that I could tolerate the texture.
    Very simple to make. And a good change to the usual cereal or eggs. A keeper!
