Introduction

These bite-sized morsels are so savory and juicy they will explode in your mouth. Roasting them adds a depth and richness that transforms ordinary cooked vegetables into something elegant. These bite-sized morsels are so savory and juicy they will explode in your mouth. Roasting them adds a depth and richness that transforms ordinary cooked vegetables into something elegant.

Ingredients

    2-4 medium carrots, chopped2-3 medium potatoes, chopped8-10 gloves garlic, peeled6-8 mushrooms, halved1 small yam, cubed1/2 lb medium tofu, cubed2-4 tbsp olive oil1 tbsp dill2 tbsp rosemarycracked chilies (to taste)salt (to taste)pepper (to taste)

Directions

1. Preheat oven to 350F. Place the vegetables and tofu on lightly oiled cookie sheet or lasagna pan and drizzle olive oil over them. Sprinkle with dill, rosemary, chilies, salt, and pepper and mix together until well incorporated.

2. Bake for 40-60 minutes, stirring every 10 minutes. Remove from oven when potatoes can be pierced easily with a fork.


Makes 6 servings.

    Pro Chef's tip; Cube potatoes, cover in cold water, cover pot, bring to a boil and immediately remove from heat and drain the potatoes, shake the steam off, put in roasting pan with other veggies and toss in the olive oil, salt, dried chilies and fresh herbs. result: crispy potatoes. - 3/13/09

    Did it without the tofu, adding a sweet onion, and with the potatoes parboiled to cut back a little on the cooking time. Terrific. - 3/13/09

    I liked this dish (and I love How It All Vegan!). I think I would make a few adjustments if I made it again. I added onions, which I thought added something. I think I'd ditch the rosemary (it's a personal thing), and I might add the yams part way through the roasting. Roasting veggies is awesome! - 3/13/09

    I love roasted veggies and right food combination is a must:) I like to roast Onion, Eggplant, Zucchini, potatoes, sweet potatoes with a few sprinkles of Grilling spice, drizzled Olive oil and pressed garlic - my nieghbor, Chris's recipe!! Yum!!! - 1/9/09

    Great recipe - substituting another protein for the tofu because soy gives me stomach stress of the worst kind! Didn't know soy also has ill effect on the thyroid but that would explain why i developed a thyroid irregularity so late in life... after a few years of soy milk, etc. - 3/13/09

    I will definately try this dish, however I will delete the tofu, as soy products are not healthy for us! (look up danger of soy products) this is something most people do not know! I was one of them and used to use a lot of soy products myself. Everything else sounds really good!! - 3/13/09

    looks good! I'm happy to see lots of garlic, but don't see any onion! I always add an onion cut int wedges, and will probably sub a sweet potato for at least one of the potatoes..just a personal preference. The recipe looks yummy as written! - 6/13/08

    Sounds great and I can't wait to try it. TIP: I'll be putting all the ingredients into a zip-loc bag and shake it around to coat, then spread on the pan before roasting. Thanks for sharing this recipe!

    Boy, those veggies sure add up don't they? I started with what was listed & then added more tofu & garlic, some butternut squash & an onion , some white turnips & few beets and before I knew it I had a 1/2 sheet pan overflowing! So unfortunately they took almost 2 hours to cook, but they WERE good! - 10/22/08

    I've made this recipe from SP several times. It's delicious and even reheats pretty well. I'd never eaten tofu before making this recipe. I'm glad to report that tofu's pretty good! This can stand alone as an entree or be served as a side dish. Yum, yum. - 4/11/07

    I fixed this tonight but I put the temp at 400 degrees for about 40 min. I used foil on the bottom for easier clean up and sprayed with Pam. I also sprayed the veggies w/Pam. I did not add tofu or chilies. I used garlic powder and black pepper and sprinkled w/parmesan cheese. Very good. - 1/18/21

    I definitely add onions and whole garlic cloves, also use olive oil spray instead of pouring oil. You get the same result with less grease and calories :) - 3/29/11

    Very similar to a side dish that I make. I don't use rosemary, chilies or tofu, and I do use beets and fennel, which takes on a VERY different taste when roasted (not sharp or licoricey).
    I add veggie broth to the pan and cover to help the cooking go faster. Then I remove foil and bake till done!

    I have made a similar recipe with butter nut squash, red onions, peppers, courgettes, mushrooms, cherry tomatoes, aubergine whole garlic small amount of olive oil with Italian herbs. all ingredients chopped in large chunks with a few cubes of feta cheese all mixed together and baked in the oven - 3/13/09

    This recipes, minus tofu, has been a basic aroung here for years. Any root veggie works in it. If you are butternut squash lovers like we are throw some in.
    I have never tried tofu in it because I had never thought of it but the tofu will go in soon.

    I made this and substituted the one cal "fat" spray, hey presto gone are the fat grams therefore making the meal extra healthy and just as tasty, fat contains the highest number of calories so its good to be able to cut them. - 7/13/08
