Introduction

Ingredients

    4 medium sweet potatoes, skins scrubbed
    1 cup chunky salsa
    2 cups canned black beans, drained and rinsed
    1/2 cup shredded low-fat cheddar cheese

Directions

1. Pierce potatoes with a fork and cook in a 400F oven for approximately 45 minutes or microwave until tender.

2. Heat the salsa and black beans.

3. Once fully cooked, slice the potato length-wise, top with 2 tablespoons cheese and 3/4 cup black beans and salsa.

Makes 4 servings

    I made this tonight for dinner, and it was a simple and tasty meal. I topped it with mango salsa and scallions, though I think I'll try it without for tomorrow's leftovers. Low fat sour cream may be nice on top too. - 5/18/08

    I love this! I do it all the time but I like to skip the cheese and to add Ground Cinnamon and Hemp oil, or Flaxseed oil, or Olive oil for the Omegas! Thanks for posting it here! :-) - 11/21/08

    I eat this combo all of time. Try using Trader Joe's precooked lentils, some onion and red bell pepper sauted in olive oil and a touch f honey and cinnamon (just a touch)...Awesome! - 5/31/09

    This is a great lunch to make. Instead of cheese a use salsa for flavor and then add broccoli into the bean mix (or whatever vegetable I have on hand) to boost the nutrition even more. - 2/1/10

    great way to get in protein and fiber -- and any beans will do! I plan to vary by topping asweets with red beans cooked with onions and peppers.
    Maybe another time I'll top with yoghurt and salsa . . . picante is my fav but I'll also try the mango salsa

    The combination of cheese and sweet potatoes did not sound appealing in the least, but I gave it a go in desperation for something new. I was suprised that it was quite wonderful. I added some salsa on the 2nd half. Yum! - 12/29/09

    Thanks for the recipe. I would not have thought of that combination. Will definitely try this as soon as I can get to the store but will slice the sweet potato on rounds and steam on top of the black beans as they heat. I like the texture better when steamed. Baking makes the potatoes mushy. - 3/23/09

    Are sweet potatoes and yams the same thing? Was wondering. This, by the way was very good. Filling. Another alternative per the Biggest Loser cookbook. cook potato, put laughing cow garlic and herb cheese in middle and serve. This way was much more of a meal. Yum - 12/28/10

    This was FABULOUS!!!! My 1/2 of yam was 8oz. 1/4 cup of black beans and 1oz of whole milk mozz (cubed) then melted in microwave for 1.5 minutes. Total Calories 405. Thank You so much this was reaallllly YUM:) - 2/11/10

    Very tasty and very filling. However, I have to bake the potatoes for at least an hour if using a conventional oven. Wrapping the potatoes in wax paper and cooking on the baked potato setting on the microwave and then baking for 15 minutes works much better. - 3/9/07

    YUM! I microwaved my potato for 5 minutes, added a tiny pat of butter and a sprinkling of garlic powder then put on the beans, a little salsa, and the cheese. At first it seemed a little starchy, but it's perfect! I also think the nutrition facts are a little off on the high end. - 6/4/09

    I'm not sure why one would take the long route with the potato and the short with the beans. I would just pop the potatoes in the microwave if I'm going to use canned beans. However, there's always more than one way to skin... a potato ;) - 5/31/09
