great way to get in protein and fiber -- and any beans will do! I plan to vary by topping asweets with red beans cooked with onions and peppers.

This was FABULOUS!!!! My 1/2 of yam was 8oz. 1/4 cup of black beans and 1oz of whole milk mozz (cubed) then melted in microwave for 1.5 minutes. Total Calories 405. Thank You so much this was reaallllly YUM:)

This is a great lunch to make. Instead of cheese a use salsa for flavor and then add broccoli into the bean mix (or whatever vegetable I have on hand) to boost the nutrition even more.
Easy and delicoius. I added onions and a tablespoon of non-fat greek yogurt.
My sister and I have a new favourite meal! It doesn't need any salt or spices - just sweet potato, beans, and a bit of cheese! Delicious in the microwave, and just a bit better broiled in the oven!
YUM! I microwaved my potato for 5 minutes, added a tiny pat of butter and a sprinkling of garlic powder then put on the beans, a little salsa, and the cheese. At first it seemed a little starchy, but it's perfect! I also think the nutrition facts are a little off on the high end.
I love baked sweet potatoes but dont care for black beans. Love the idea of adding some fat free cheese on top. Will be sure to make this
I enjoy foods that have a full flavor. Sweet potatoes are great and I love cheese too. With the compliment of the fiber rich beans "Cheesy Vegetarian Sweet Potato with Beans" is a recipe that I really look forward to trying.

Sounds fast and tasty. Planned for tonight's dinner but I will double the cheese and used low sodium black beans.
Suprsingly tasty, and I don't even like beans! I may have doubled the cheese and used a few less beans, but this was super easy to make and packs in quite a bit of nutrition- I've found my new last-minute dinner!
I made this tonight for dinner, and it was a simple and tasty meal. I topped it with mango salsa and scallions, though I think I'll try it without for tomorrow's leftovers. Low fat sour cream may be nice on top too.
