Introduction

i made my own applesauce for this in my blender with the peel. I couldn't find it in the search so I used the next best thing, but I'm sure it would make a difference. Ingredients

    1/2 cup unsweetened applesauce
    1 cup brown sugar - lightly packed
    2 eggs (medium)
    1 tsp. Vanilla Extract
    1 cup canned pumpkin puree (or fresh
    cooked and mashed)
    2 cups all-purpose flour
    4 tsp baking powder
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp cloves
    1/4 tsp ginger

Directions

Preheat oven to 365 degrees farenheit

Mix together applesauce, sugar, eggs, vanilla extract and pumpkin puree. Sift together all dry ingredients. Add dry ingredients to pumpkin mixture. Drop by tablespoon full onto a lightly greased cookie sheet. Bake for about 10-12 minutes or until bottom of cookie is light brown.

Makes aprox. 45 cookies.

    These were so easy to make. My kids are going to love them. You can even make a cream cheese icing for them. 4oz fat free cream cheese, 1/4 c. sugar and 1tbl. skim milk. - 12/3/07

    My kids loved these, and I liked them very much. They are quite cake-like, which isn't my favorite cookie texture, but I know that's a result of the low fat content. Might try a small amount of oil next time instead of the applesauce and see how that affects the texture. - 6/8/10

    Has anyone made this wonderful-sounding recipe using brown sugar substitute instead of real brown sugar? If so, how does it taste? It would save a few calories, so I'm interested in finding out if it works out just as well as the original recipe. - 1/1/08

    I used 1/2 c. of whole wheat flour and my dough was more like batter. So, I scooped it into mini muffin tins and ended up with 48 full mini muffins. They taste yummy and I'm sure I'll be making these again. - 11/29/07
