Ingredients

    2 cups all-purpose flour
    3/4 cup white sugar
    3/4 tsp salt
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1 cup chopped cranberries
    1/2 cup chopped walnuts
    1 egg
    2 Tbsp canola oil
    3/4 cup orange juice
    1 Tbsp orange zest

Directions

1. Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.
2. Combine the flour, sugar, salt, baking powder, and baking soda. Add the cranberries and walnuts, and stir to coat with flour. Mix together the egg, oil, orange juice, and orange zest.
3. Bake for 50 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes, then remove to a wire rack, and cool completely.

Makes 12 servings.

    very easy recipe. no fresh cranberries on hand... used craisins instead. warmed the orange juice and soaked the craisins for 20 mins. - 10/6/09
