Introduction

Cook in the crock pot all day, add the evaporated milk, and it's ready to go! Cook in the crock pot all day, add the evaporated milk, and it's ready to go!

Ingredients

    6 large potatoes, cubed
    3 large carrots, sliced
    3 stalks celery, chopped
    2 onions, chopped
    4 chicken bouillon cubes
    6 cups of water
    1 can nonfat evaporated milk
    shredded cheddar cheese (optional, not in calculation)

Directions

Combine all vegetables, bouillon, and water. in large crock pot. Cook on low for 8 - 10 hours, or high 3 -4. Add evaporated milk, stir till heated through, and serve. May serve with shredded cheddar cheese.

    UPDATE last night I made a few additional changes. I used 4 cups of low sodium chicken stock, 1 onion instead of two, removed the soup mixture from the crock pot and blended it. Saute 1 onion and turkey bacon together and added as topping along with cheddar cheese. AWESOME!!! - 11/6/08

    I've made my own Potato soup for years, but I'll try this as a healthy alternative. If its too runny, try adding some instant mashed potato flakes at the end. You can also add a head of broccoli and turn this into "cream of broccoli" soup. :) - 10/20/09

    Delicious and easy! I added mushrooms and used only 1 onion. Added thyme and bay leaves for flavor--would suggest seasoning to taste. Also used 4c low-sodium chicken broth and 4c water. A quick whirl with the immersion blender thickened it up nicely. Will make again! - 12/31/09

    Never had celery and carrots added to my potato soup so I was a little skeptical but it turned out really good. I added a little bacon bits and cheddar on top for my kids and they loved it. - 1/21/09

    This was very good. My husband even liked it. I used fat free chicken broth with 50% less sodium and added about 1/2 cup of instant potato flakes to give it a little thickening. It really turned out well. I would recommend this to everyone - 11/29/09

    Wonderful! Even my husband loved it and he is hard to please when cooking healthy! It was perfect for a cold, rainy night. We did not think it was thin. It is soup and not stew. Thanks for sharing. I love being able to put everything in the slow cooker and walk away. - 12/15/08

    Made this as written the first few times. I now use only 4-4 1/2 cups water, 4 Knorr Vegetable Boullion cubes - they are larger than regular cubes and give a rich flavor. Usually add extra carrots & celery, sometimes veggies from the garden - green & wax beans, etc. Great soup. Family fave! - 9/22/11

    It's so easy to make. I threw everything together the night before and stuck it in the fridge so all I had to do in the morning was put it on the heat. It's a little bland at first but easy to season to taste. And SO filling. - 3/30/10

    It's pretty bland, but I dumped in some garlic, seasoned salt, parsley, cayenne, and black pepper and then it was really tasty. I used an immersion blender to blend some of it into a nice thick, but chunky soup. It was a big hit! - 3/17/10

    Great! Creamy potato soup is a weakness of mine so this is a fantastic find! I definitely recommend adding spices and a little less water, or finding another way to thicken it up - 1/27/10

    To thicken I used my stick immersion hand blender to make blend up some of the potatos, carrots and celery into a paste like mixture that made the soup creamy. - 10/16/09

    It smelled SO good cooking in the crockpot...but we weren't impressed, even after blending it to make it thick and using cheese, turkey bacon, and other seasonings. Surprisingly, the leftovers were good the next day. Don't think we'll make this again. - 3/25/10

    I MADE THIS AS WRITTEN, BUT USED A DUTCH OVEN ON THE STOVE. I DID NOT ADD ANY SALT AT FIRST AND IT WAS BLAND. I USED 2 CANS OF LOW SODIUM CHICKEN STOCK. THE SECOND DAY I ADDED ABOUT FOUR SLICED OF COOKED REGULAR BACON, PEPPER, CELERY POWDER AND A LITTLE SAGE AND THE TASTE WAS MORE TO MY LIKING. - 3/8/10

    This recipe is great. I had my doubts when I read the non-fat evaporated milk, but you can't tell it at all. I love potato soup and this really filled the bill. My husband loves it as well.

    I cooked it on top the stove though because I decided to make it after work.

    I added 4 cups instant mashed potatoes with garlic I'm like somebody else earlier how big is the serving. I did not use chicken flavored cubes I use chicken broth instead since it cost for 6 cups of water I used 6 cups of chicken broth low sodium I added 6 cloves of garlic added Mrs Dash too. - 7/2/16

    I made as posted and also felt it was a bit bland. It makes a good base for adding whatever you like and have on hand. I topped with sharp cheddar and chopped green onion on top, which helped. Will add spices to the left overs. Easy to put together in the AM before work. - 8/20/15

    So easy to make. I used one large onion, added a small amount of garlic and sage. We loved this soup. Today i will be steaming some broccoli and serving the leftovers as cream of broccoli soup. Will be making this one again. - 1/31/15

    I made this receipe as written except I used only 1 onion. When it was done, I blended it up some with my hand mixer and it turned out great! Since I am watching my salt intake, it was perfect for me. I added some pepper to my serving and it was very filling and satisfying. A keeper! - 9/30/14

    What is the serving size?? I figure my soup recipes at 1 cup per serving, which would makes this serve 9. I skipped the water and bouillon to use a 900ml container of chicken stock instead. Added garlic ( to taste ), a dash of worcestershire sauce and 2 bay leaves. Still 138 calories per serving.

    I prepared this in crock pot on low before I went to bed. I included cooked turkey bacon. Added the evaporated milk just before serving for noontime lunch. Used hand-held blender to cream all ingredients. Awesome thick, creamy soup! Great or winter's day! Thanks! - 1/19/14

    Go ahead and use two sweet yellow onions but sauté them in a small pan with non stick spray (butter flavor is good if you have it) then add to the pan and continue as instructed. Good standard soup. Sprinkle a little shredded low fat cheddar on the top for looks and flavor. Green onions too. - 12/6/13

    Great taste but extra seasonings a must. We added the usual (salt, pepper, garlic) but could use more. Like the bacon idea. A little watery, next time might use 4 cups of chicken stock instead of 6. - 9/21/13

    I made thisbrecipe last week, and my family loved it! Before serving, I did blend-up some of the vegetables to thicken it a little. Also, I put a few spices on the dinner table for people to add as they wanted. My husband gives the recipe a five. He said he would give it a six if it were spicy. : - 12/2/12

    Wanted a thick soup, so added pot. flakes to thicken, then pureed. Tasted different than I 'm used to; but I'm used to this kind of soup being weighed down with cream/cheese.     Needs some seasoning (I used basil, thyme, salt, pepper, and garlic) and a whirl with the immersion blender. After that it's very yummy. Doesn't even need the milk.
    4 minutes in the pressure cooker, by the way, and it's dinner made quick!

    Very easy to make; however I must have had the tuffest potatoes ever-took longer to get textue I wanted; next time I'll boil them a bit first; taste was good; to keep down the sodium I used fat free low sodium chicken stock instead of the boullion. - 1/9/12

    Made this for dinner tonight and it was great! The only change that I made was that I used 4 cups vegetable stock and 4 cups of water and added a bit of Tarragon and 2 bay leaves as a previous reviewer had suggested and also a bit of s&p in the end.I also gave a quick swirl w/ the immersion blender. - 2/7/11
