Ingredients

    1 pound Lean Ground Beef
    1 Packet of Taco Seasoning
    1 Garlic clove Minced
    1 Package of Medium Sized Tortillas
    1 Jar of Salsa Your Preference
    1 Medium Onion diced
    1 Cup of Shredded Low Fat Cheddar

Directions

Take Ground Beef & onion brown in pan Drain Grease, and Taco seasoning and follow directions on package.
Remove from heat.

Heat Oven to 425 degrees.

In a sauce pan add half of the jar of salsa and the cheese melt until combined.

Take a 9X13 baking dish and lightly spray with cooking spray to prevent sticking.

Use a Tortilla shell add 1/4 cup of the beef mixture to the middle of the tortilla and dress with some of the cheese sauce.

roll up and place the crease in bottom of baking dish repeat until all 6 are made.

these should fill the pan if not you skimped on everything too much lol

Use the remaining Jar of salsa by pouring over the tops of the enchiladas

Bake at 425 for 45 min or until tops are brown

eat and enjoy
we like sour cream with our buts it option the kids love them they dont last long in our house.

1 serving is 1 enchilada.

usually serve with corn and rice on the side.

    I love this recipe, at the end is it really supposed to be 425 for 45 min? The first time we made it it was really charred on top, we ended up just putting it in for about 15-30 min. - 3/19/09

    you can keep it from charring on the top by covering with foil. :)

    Also, Old El Paso makes a reduced sodium tace seasoning packet which could help to reduce the sodium in this recipe. - 1/9/09

    What % lean was the ground beef? I use 93% lean and was wondering if that would make a difference in the calories? - 1/25/09

    it would prolly bring it down just tad you can also work with ground turkey and or shredded chicken what ever meat you like to use.
