Introduction

This lively low-saturated fat pasta dish contains lots of tomatoes and herbs and very little oil. This lively low-saturated fat pasta dish contains lots of tomatoes and herbs and very little oil.

Ingredients

    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 1/4 cup freshly minced parsley
    • 4 cups ripe tomatoes, chopped
    • 1 tablespoon fresh basil, chopped or 1 teaspoon dried basil
    • 1 tablespoon oregano leaves, crushed or 1 teaspoon dried oregano
    • 1/4 teaspoon salt
    • ground red pepper or cayenne pepper to taste
    • 8 oz. uncooked fusilli pasta (4 cups cooked)
    • 1/2 lb. cooked chicken breasts, diced into 1/2-inch pieces (3/4 lb. raw) (optional)

Directions

1. Heat oil in a medium saucepan. Sauté garlic and parsley until golden.



2. Add tomatoes and spices. Cook uncovered over low heat 15 minutes or until thickened, stirring frequently. Add chicken and continue cooking for 15 minutes until chicken is heated through and sauce is thick.



3. Cook pasta in unsalted water. Drain.



4. To serve, spoon sauce over pasta and sprinkle with coarsely chopped parsley. Serve hot as a main dish and cold for the next day's lunch.



Yield: 4 servings--Serving Size: 1 cup

    Very Good!
    I added sliced red bell pepper and a thinly sliced onion.I also substituted sliced italian sausage instead of the chicken.We Loved it!!!Will DEFINITELTY make it again! It's even better the next day and freezes well.

    So easy and yet so delicious !! At first I got scared by the name of the Recipe (Red Hot Fusilli) but when I read it over, the burn-you-to-death hot peppers were only "to taste" and we didn't even need them to make this turn out great. - 3/22/09

    This recipe is terrific. Followed exactly and it was so good next night I added slivered red pepper and baby scallops. Am planning on trying shrimp next. This will become one of my standards that I use all the time! - 3/13/09

    I added a small chopped onion, another garlic clove, a pinch of crushed rosemary, and quinoa penne for a slightly more spicy gluten free version. You could add bell peppers, black olives and/or mushrooms for a variation. - 5/28/08

    Very good. I did substitue slices of chicken sausage (with spinach & cheese) for the chicken breast and it added lots of flavor. My husband would still prefer a traditional pasta sauce, but I liked this healthier alternative. - 3/27/08

    I threw a chopped up onion into mine. Love the way the herbs help it come together! A caloric and sodium steal, and high in protein. And I still have leftovers for lunch for a few days. - 3/22/09

    I really enjoyed this recipe. I substituted medium cocktail shrimp for chicken. I think next time (and there definitely will be a next time!) I will chop up a green pepper or two and toss it in there. I put in a little cornstarch to thicken it, but I'll try tomato paste next time. - 12/2/08

    My husband and I loved this! We like spicy food and this filled the bill. I didn't have enough fresh tomatoes so I used a can of diced tomatoes plus one chopped fresh tomato. I also had to use fettucine, couldn't find fusilli at the store. - 12/9/07

    Yummy is the term that best describes this. I added bell peppers, onions, and celery to mine. I also did two tablespoons of dried basil instead of the two teaspoons of dried and added freshly ground pepper. I used organic whole wheat pasta. It was delicious! - 2/21/10

    I am trying to stay away from the pasta of any kind so what I did was to make the sauce and spoon it over fresh chicken breast and bake it in the oven for 45 minutes at 350. It smelled awesome and my daughter thought it was excellent served with a salad and veggies. - 2/5/10

    I cook with hot peppers often & have a suggestion if you're nervous about "hot" (ref. comment on this). Try habernero and/or serrano peppers: they have more flavor than heat. Be careful, though: when new to preparing hot peppers, use gloves. The oils linger on your fingers. Don't touch your eyes!!!! - 5/2/10

    I misread the instructions when I was cooking and ended up using 1 tbsp of cyan pepper...needless to say it was VERY red hot fusilli . I will use this recipe again in the future using less cyan though lol. - 8/29/09

    This is a recipe that I will be trying. My family does not eat chopped tomatoes, or fresh tomatoes in any fashion, so will have to substitute tomato sauce and some tomato paste. I like the idea of adding italian sausage, I have plenty of that in the freezer. - 3/12/09
