1 acorn squash
sea salt
cooking spray

Directions:
Preheat your oven to 425 degrees.
Use a vegetable peeler and peel the squash. Cut it in half and scoop out all the seeds. Slice up the squash into 1/2 inch thick-ish slices, Slice them again if you want them in a more fry-style shape.
Spray a cookie sheet with non-stick spray, put the squash on the pan and sprinkle with the salt.
Bake for 35-40 minutes or till they get a lil browned.
These ended up tasting allot like regular potato fries, not all sweet like sweet potato fries. My roommates and I really liked them allot and they went great with ketchup and also with a dip recipe that I have on this site that's pretty much half Veganaise, half ketchup and some fajita seasoning. Yay for simple and yummy recipes! (that are actually good for you)

Loved it, but suggest not using a vegetable peeler to remove skin as the acorn squash has crevices that could not be reached with a peeler. Almost cut myself trying to use peeler. Next time I'll use a paring knife. I used paprika, red pepper, sea salt, and cajun seasoning on mine. Better than fries! - 11/25/13
