Ingredients

    2 cups diced ham (8 oz)
    1 cup diced bell pepper, chopped
    1/2 small onion, diced
    1 package simply potatoes
    2 cups fat free cheddar, divided
    1 cup fiber one pancake mix
    2/3 cup water
    2 cups skim milk
    3 egg whites
    salt & pepper
    Tabasco sauce, to taste

Directions

Grease 9x13 pan. Layer first four ingredients in pan. Add 1 cup cheese over mix. Mix pancake mix, water, milk, egg whites, salt & pepper and sauce in a mixing bowl. Pour over mixture in pan. Sprinkle remaining cheese over pan.

Bake @ 375 for 35 minutes. Makes 12 servings.

    simply potatoes is prepackaged uncooked hash browns. Its usually found near the eggs and egg beaters. It is in a green package. Its refrigerated, not frozen. - 4/17/10

    I love the idea of using the pancake mix in place of the usual bread in these breakfast casseroles. Fiber One pancake mix is awesome with all the fiber...so good for you! This was yummy! - 12/27/08

    Potluck breakfast today; making this with chopped roast chicken instead of ham, but also with fresh potatoes and with home-made pancake mix = using what I have on hand! :D No tabasco sauce, either, will have to improvise! I have some barbecue sauce! mmmm :D Thanks, QUACKIMADUCKY for suggestions! - 9/27/14

    The recipe is good but since I was feeding big appetites I did the following(plus I had red potatoes and not simply potatoes on hand): chopped coarsely about 8 red potatoes, cooked them stovetop with 5 minced garlic cloves and seasoned with spike's. I laid this in the bottom layer. It was a hit! - 7/8/12

    This did not set it was runny like and the hash browns were too weird in it because they weren't crispy. Will not make this again. - 6/6/09
