Ingredients

    14 oz can salmon
    2 beaten eggs or 6 TBS liquid egg whites
    1/2 onion finely grated
    1 tsp dill weed
    6 TBS Panko bread crumbs
    1 tsp lemon juice
    2 or more dashes hot sauce

Tips

For low carb use pork rinds or go with out. Use whole eggs and fry in a pan.


Directions

Spray baking dish with olive oil spray. Mix all ingredients together and form into patties. I like to use a 1/4 measuring cup to portion them. Place in baking dish and give a spray of olive oil spray to lightly coat the top. Bake at 350 for 10-15 minutes.
You can also use tuna or any flaked meat.
Makes 8 croquettes.

    Tasty but I used tuna and they did not brown up at all on top and lookec kind of ane!mic. So I mixed a bit of panko , parmesan, and a couple drops of oil and sprinkled on top and put under broiler for a couple minutes. Aldo served with aioli sauce for extra flavor. - 2/25/18

    I tried these and they are good example of how to make a favorite traditional recipe more lowfat, lower cholesterol. Used tuna,and egg whites but missed not having olive oil spray. Mild flavor. A little delicate and it is unfair to compare to fried. - 7/17/15

    I made this with tuna last night for dinner. I used minced garlic instead of the dill weed. They seemed a little mushy when I pulled them out of the oven so I lightly browned them in a skillet with olive oil. They were a hit with the family and I will make them again. Very easy and inexpensive! - 4/16/10

    I used 2 cans of salmon and fesh Sara Lee Delightful wheat bread. I also added Worstershire sauce. I baked it in a loaf pan. Mt husband said it was the best he'd ever eaten. Thanks! - 12/1/09

    A real easy recipe to make, and finally I found a use for those Panko bread crumbs I bought a while back. Both hubby and son raved over these. I used a 1/4 cup measure as suggested for each one and came out with 9 servings--next time I'll pack fuller. And there will definitely be a next time! - 7/19/09

    Outstanding recipe! My 10 yr old dtr ate 4 of the patties herself. The suggestion of using a 1/4 cup measure to portion is perfect, and I just plopped them right onto the pan from the cup... so neat and easy! - 1/4/09
