Ingredients

    Cauliflower, raw, 1 head, medium (5-6" dia)
    Sour Cream, .25 cup
    Butter, salted, 2 tbsp

Directions

Steam cauliflower until soft. Place cooked cauliflower in a pot and heat to remove excess moisture. Puree cauliflower in food processor and add butter and sour cream.

    This is a MUST for a south beach style diet! I've always made mine with cauliflower, butter, onion and garlic powder, AND... add a can of white kidney beans to the cauliflower before you mash. It is the closest thing you'll ever get to real potatoes without the potatoes. Try it on Shepherds Pie!! - 6/9/11

    I love cauliflower and eat it often but by no stretch of the imagination is it anything like potatoes and is much better not mushed up into a soggy wet mess. The only similarity to potatoes I can see is that it is white, completely different taste and texture. - 11/11/14

    I also mix equal amounts of potatoes (with skin) and cauliflower, no sour cream, just skim milk. Not whipped, but "smashed". Garlic and pepper. Let others add their own butter. Everyone in my family who "hates" cauliflower, loves this. They have their vegies and always ask fo more - 11/17/10

    I cannot eat dairy and have used various recipes but this is very deliousious, using nondairy sour cream but my choice is non dairy cream cheese as it is just much more rich and delicious and about the same calories

    I really liked this recipe. So did several of our Thanksgiving dinner guests. Unfortunately my guys learned that it wasn't real potatoes, and did not consider cauliflower a good substitute for mashed potatoes. So, I ate their share. Yum!! - 11/26/10

    This is very good, but husband says to call it mashed cauliflower, and quit pretending, it's still "mashed cauliflower", hates people trying to fake some veggie to make it more palliative ! Enjoy! - 7/28/15

    I LOVE these!!! I usually go to Ruby Tuesday just to get their faux mashed potatoes. Now I can make my own!!!

    I used fat free sour cream and calorie free spray butter. Still, they are great. Added garic, pepper, and salt of course.

    I steamed the cauliflower, pureed it and stir-fried it with it with shallots garlic, cumin seeds, one sliced green chilli and turmeric powder. This was accepted more than the mashed version - 11/12/19

    This is delicious - but it does not taste like potatoes. If you tell yourself if will, you will be disappointed. If you want to make a cauliflower recipe that tastes good - this is is. Don't try and trick anyone - just tell them it's a new way to eat cauliflower! - 11/11/19

    This is a little bland for our family, but seasoning to taste with Nosalt and pepper made the difference. it made a wonderful side dish, but i would probably not take to get-togethers. - 2/3/13

    Cauliflower and potatoes are two entirely different vegetables----alike only in color.This is mashed cauliflower----nothing like mashed potatoes in flavor or nutritive value. I prefer my cauliflower as florets that are not over-cooked and mushy.

    Next time I want to roast cauliflower before blending with the butter and cream, with the minced garlic or dried garlic. I cooked in the Instant pot, steamed 25 min, so for my smaller head? it was a bit overcooked. I added Smoked salt, dried dillweed, tiny smidge paprika and roasted cumin. Yummy! - 11/13/17

    *I have NOT tried this exact recipe - per se.*I have "mashed" cauliflower and added "salad" dressing sandwich spread low calorie of course", and maybe a tad of oleo INSTEAD of sour cream. *HOWEVER - mashed potatoes are mashed potatoes AND mashed cauliflower is mashed cauliflower. *Both good! - 11/16/15

    What this recipe omits is cut the cauliflower into florets so it will cook evenly enough to "rice", mash well and not taste like horseradish. The picture shows green onions and maybe bacon which aren't in the recipe! Need some truth in advertising here. - 11/11/14

    Help! Mine turned out tasting just like horseradish! Way to strong and inedible. Maybe I didn't cook the cauliflower enough. Steamed it for about 25 minutes but inside was still a bit hard. Is there any way to save it or do I have to throw it all away? Thanks for your help! - 2/8/13

    I just made this recipe and its actually really easy to make and delicious! I saw this recipe on another site and combined both recipes, the other recipe called for 1/2 an onion and parmesan cheese. The 1/2 an onion is my only regret, it overpowers it.
