I love cauliflower & I love mashed potatoes. One will never be a substitute for the other on my table. Real mashed potatoes for me, but if I serve them every other month, that's often. But when I was a kid, mom made them with non-fat milk & I do too.
Next time I want to roast cauliflower before blending with the butter and cream, with the minced garlic or dried garlic. I cooked in the Instant pot, steamed 25 min, so for my smaller head? it was a bit overcooked. I added Smoked salt, dried dillweed, tiny smidge paprika and roasted cumin. Yummy!
This looks like it could be good but 1/2 cup of mashed potatoes made with low fat milk and a smaller amount of butter is a treat for me occasionally. I may try this with mixing equal amounts of potato & cauliflower.

Excellent lower calorie version of a favorite.
*I have NOT tried this exact recipe - per se.*I have "mashed" cauliflower and added "salad" dressing sandwich spread low calorie of course", and maybe a tad of oleo INSTEAD of sour cream. *HOWEVER - mashed potatoes are mashed potatoes AND mashed cauliflower is mashed cauliflower. *Both good!
Add a dab of cream cheese (full fat) and it's yummy too!
And bacon bits. Top with grated cheese.
I cannot eat dairy and have used various recipes but this is very deliousious, using nondairy sour cream but my choice is non dairy cream cheese as it is just much more rich and delicious and about the same calories
This is a little bland for our family, but seasoning to taste with Nosalt and pepper made the difference. it made a wonderful side dish, but i would probably not take to get-togethers.
Are the nutritional facts correct? Because it looks like 69% of the calories in the dish are from fat, which doesn't sound like a "light" dish to me.
Good recope. Added a pinch of salt and some pepper . . . no sour cream. Delish!
I LOVE these!!! I usually go to Ruby Tuesday just to get their faux mashed potatoes. Now I can make my own!!!

I used fat free sour cream and calorie free spray butter. Still, they are great. Added garic, pepper, and salt of course.
