Introduction

Soothing and delicious, this soup seems to revive me right from the first spoonful. Number of Servings: 6

Ingredients

    1 Tbsp. olive oil
    1 small onion,chopped
    1 medium carrot,chopped
    1/2 cup green pepper,chopped
    1 garlic cloves,minced
    3 cups cooked black beans
    1 can tomatoes,diced undrained
    2 bay leaves
    1 tsp.ground cumin
    1 tsp.dried thyme
    1/2 tsp. cayenne pepper
    4 cups water
    *optional salt and pepper to taste
    ** optional 2 tsp.lemon or lime juice
    *** optional vegetable or chicken stock instead of water

Directions

Saute onion, bell pepper,and garlic in olive oil 5 minutes while you prep the remaining vegetables.
Transfer to crock pot. Add the beans, tomatoes and their juice, 4 cups water (or *optional vegetable stock or chicken stock),bay leaves, cumin,thyme,and cayenne, and season with salt and black pepper to preference.
Just before serving,stir in the optional lemon juice. To thicken, puree at least 2 cups of the soup solids and return to the cooker.
This make 6 very generous servings.

    How long do you cook this, and what setting do you use? I want to make this today! - 12/9/08

    I use a crock pot but you could put it on the stove top. With a crock pot I let it cook 6-8 hours.Pre-cooked beans saves a lot of time & you could rush it in an hour.I prefer the crock-pot to give flavors a chance to blend.

    I made this but made it the way I always do by sauteing the onion, bell pepper, garlic in olive oil then add canned black beans, salt and pepper to taste. If you just want more beans then soup, skim some of the juice off. My family loves it over yellow rice with cuban bread. - 5/11/09

    This was fantastic! I made it with 3 cups water instead of 4, and pureed it at about 7 hours, then let it cook another half hour or so. Great with some lite sour cream! - 3/1/10

    Delicious! I also made it with dried beans - 2 cups dried beans and about 5 1/2 cups water. It worked great. I also added about 1 TB Wyler's chicken granules. - 6/2/09

    This was delicious! I added turkey bacon for my husband and I used canned black beans. The soup was a little thin (even after pureeing the beans) so I would cut down on some of the broth. - 3/1/09

    My family loved it. My youngest daughter who hates anything healthy even enjoyed it and thanked me for the meal. My husband found it nice and spicy but the kids did not feel it was too spicy. This will definately become a staple in our house. - 1/25/10

    This is SO good! This is the second Spark recipe I've made and it was a huge hit - flavorful, great color and filling. For one of the 14-oz cans of tomatoes I used a can of diced roasted tomatoes and I used smoked sausage. I'm sure it is just as tasty in its original form. Thank you - great recipe! - 10/7/09

    This is good!!!!made it without the tomatoes and used fresh thyme and garnished with chopped scallions...reminded me of my years in Miami eating Cuban Food without the roast pork and the fried plantains and the rice, ok ok I am coming back to reality the soup was good. - 12/9/08

    Yum! Made with dry beans and 6 cups of water, another review did it that way so I thought I would try. This was my first time using dry beans.     Excellent basic black bean soup recipe. Spices are perfect. Cooking dried beans rather than using canned adds depth. I used the last of summer 2013 farmer's market height-of-summer tomatoes (frozen), and I topped it with fresh cilantro from the garden. Home baked whole wheat bread on the side. Yum! - 5/19/14

    I found the soup to be rather bland which the cayenne pepper probably hides if you put it in, which I didn't since tasty food not spicy one is what I prefer. I added a tbsp of chili powder to it to improve it, but it still needs work in the spices and herbs dept imo. - 2/22/12

    This was yummy! I made a few changes - added more beans and less vegetable stock. I used my immersion blender and blended the whole pot of soup. I also mixed about a tablespoon of light sour cream into my bowl of soup - it added just a little more to it. - 3/13/11
