Ingredients

    Ingredients
    13 1/2 ounces whole wheat macaroni
    3 tablespoons olive oil
    2 garlic cloves, minced
    1 medium onion, chopped
    2 green bell peppers, diced
    2 red bell peppers, diced
    1 tablespoon dried chopped basil
    8 cups red spaghetti sauce
    2 lb Italian turkey sausage, cooked and sliced thin
    2 cups reduced fat shredded mozzarella cheese, divided
    1 cup parmesan cheese, grated, divided

Directions

Cook the elbow macaroni according to package directions. Preheat oven to 350 degrees F.
Heat olive oil in large skillet. Add garlic, onion, peppers, and basil. Sauté 3 minutes, then add the sauce and sliced Italian sausage. Simmer 5 minutes.
Spread 1 cup of the sauce mixture into the bottom of a 9x13 baking dish.
Layer 1/2 of the macaroni, 1/2 of the sauce mixture, 1 cup mozzarella and 1/2 cup Parmesan.
Repeat, and bake 25 minutes.
Let stand 10 minutes before serving

    i haven't eaten this yet, but this recipe reminded me why i dislike cooking. my largest skillet is apparently too small. my "9x13 inch pan is overflowing, and i am exhausted. this is not my kind of recipe, with all the chopping, cooking the sausage ahead of time, its way harder than i thought. - 10/12/09

    O.K.
    A lot of work for something that was just ok. I love a saucy pasta, but there was SO much of it. May have been better overall with a larger pasta, macaroni was just not the right choice.

    I made this dish last night. Hubby and I loved it! It was so easy to make and the flavors blended perfectly. I suggest cutting the recipe in half. We won't have to cook for a week! Which is just fine with me because I can't get enough of it! - 6/21/11

    Wow! This is really tasty. I didn't care for the sauce I'd selected but the peppers and spices changed all that. I made it just as written. I could only find smoked sausage which was good, but I can't help thinking it would be awesome w/real Italian sausage if I can find it made w/turkey. - 10/31/10

    This recipe is delicious! We had it for supper tonight. My husband and I cleaned our plates. It's one of those meals you just feel good after eating.
