Ingredients

3/4 lb chicken, cut in 1/2" cubes
1 green pepper, chopped
1 1/2 c salsa
125g light cream cheese (1/2 a block)
1 c black beans
1 tomato, chopped
2 - 7" tortillas
1/2 c shredded cheese
1 tsp taco seasoning
Directions
Preheat oven to 375 F - Cook chicken with taco seasoning in a non-stick pan on medium heat for 2 min - Add the green peppers and cook for 2 min - Stir in the salsa and cook for 2 min - Add the cream cheese and cook for 2 min or until melted - Stir in the beans and tomatoes.
Layer the following in an 8 x 8 baking dish:
- 1/3 chicken mixture
- 1 tortilla
- 1/3 chicken mixture
- 1/2 shredded cheese
- 1 tortilla
- 1/3 chicken mixture
Cover with foil and bake for 20 minutes - Top with remaining shredded cheese and bake uncovered for 5 minutes

This was very good. I had found the recipe on kraftfoods.com and was excited to see it already entered in spark. My husband and I will definitely make it again. We absolutely loved it! The kids weren't too crazy about it but that's the way it goes with a lot of things. They like things plain. - 1/29/09
