Ingredients

    Onions, raw, 1 small, chopped
    Chili powder, 1 tbsp
    Cumin, 2 tsp
    Garlic, 2 clove, minced
    egg white, fresh, 4 large (or 1/4 cup)
    Jalapeno Peppers, 1 pepper, chopped fine
    Extra Lean Ground Beef, 1 lb
    Cracker barrel old light cheddar, 100 gram

Directions

Add all ingredients to large bowl and mix well. Form into loaf and put into loaf pan (or on cookie sheet) and bake for 1hr 15 min at 350F. Let sit 10 min before serving. Store in fridge for up to 2 days or the freezer for up to 1 month.

To reheat, bake for 20 min at 325.

    Incredible!
    I thought this recipe was excellent. Even though I forgot to add the cheese, the meatloaf was delicious. I added some red potatoes cooked in about 2 tsp of Extra Virgin Olive Oil and Rosemary. For about 350-400 calories, I had a very satisfying dinner. I will definitely make this meal again. YUMMY - 1/28/09

    Incredible!
    The meatloaf was very good, but I suggest putting it in a loaf pan. I put it just on a baking sheet and the cheese all melted out while cooking so it turned out to be just a jalapeno meatloaf. I also used extra lean ground turkey, added a little worcheshire sauce and it was delicious! - 1/22/09
