Ingredients

    3 lbs boneless elk steak
    1 cup chopped onion
    1 small can canned mushrooms, about a cup
    3 cloves garlic, crushed
    1 T butter
    6 T whole wheat flour
    2 T dry sherry
    3 T lemon juice
    1 qt beef broth
    1 1/2 cups fat free sour cream
    hot cooked brown rice

Directions

Cut the elk steaks into 1/2 inch strips crossgrain and set aside
Cook onions and garlic in butter in the bottom of a large kettle until tender. Add steak strips and cook over medium high heat until well browned, stirring often. Add flour ands next 4 ingrediants stirring well. Bring to a boil, reduce heat and simmer for 15 minutes stirring occasionally. Stir in sour cream and and cook over low heat until thourghly heated through, but do not boil. Serve over brown rice. Also, if necessary, add a couple tablespoons of cornstarch for extra thickening before adding the sour cream. Yield 9 1/2 cup size servings.

    DIRECTIONS SAY: , if necessary, add a couple tablespoons of cornstarch for extra thickening before adding the sour cream and buttermilk. I don't see mention of Buttermilk in the ingredients?
    This sounds great, will make with beef.

    Sorry about the glitch in the directions. I edited it earlier to exclude the buttermilk and to add all fat free sour cream, but I forgot to exclude it in the directions.
