Ingredients

    2 large sweet potatoes
    1 T. I Can't Believe It's Note Butter LIght
    1/4 cup Fat-free Half and Half
    Splenda to taste


    Makes 6 1/2 cup servings.

Directions

Peel and cut sweet potatoes into chunks. Cook in boiling water until fork tender. Transfer to food processor and blend until smooth. Add in remaining ingredients and blend until smooth and creamy.
