Ingredients

    3 split chicken breasts
    two lemons
    flour to coat chicken
    tsp garlic powder
    tsp to tbspn pepper
    1 tbsn olive oil
    1/4 cup country crock margarine

Directions

Cut chicken breasts into four to five pieces. coat with flour. Heat olive oil and margarine in frying pan, put chicken in pan, season with garlic and pepper. Cook chicken 4 minutes on each side on medium, then squeeze lemon over chicken and cook another four minutes. Times are from cast iron frying pan, slice open a piece and make sure it's white all the way through

    Really nice --- I had made this before but with loads of butter. Served with fresh green beans. I did add a little water to the pan to deglaze the chicken. - 4/1/09

    I fixed this tonight, and it was very good. I used less lemon, since my son doesn't like heavy lemon, but it was very good. I also liked the light flour breading - helped lock in the juices. I used lemon pepper on my own, to give it more lemon taste. Will definitely cook again! - 2/3/09

    Thanks for this recipe - quick, delicious, simple, and I had all the ingredients on hand! The whole family loved it. I made only one small change; I added lemon pepper to the flour when coating the chicken. I used a non-stick skillet, and it took about 6 minutes per side. - 5/13/15

    I used lemon zest as well because I LOVE lemon, and added a sprig of rosemary. I stuck to olive oil only and didn't flour the breasts as I don't find it necessary. I also deglazed the pan with a splash of white wine and that made a remarkable sauce! - 1/13/13

    I made this with just the olive oil and no butter. I would recommend flattening the chicken breasts or making sure they are sliced so they cook all the way through. Served it with kale chips and jasmine rice. - 2/11/11
