Ingredients

    1 T EVOO
    2 c. chopped onion
    2/3 cloves garlic
    1 large red pepper
    1 # red lentils
    1 can coconut milk
    1 T grated ginger
    1 bay leaf
    1 t salt
    1/4 t pepper
    1 t curry paste

Directions

Heat EVOO in large sauce pan over ed-hi heat. Add chopped onion, cook until soft. Add ginger, red pepper, garlic cook 5 min. more or until onion is golden. Add Coconut milk cook briefly, add curry paste, cook about 5 min. Stir in lentils and bay leaf. Bring to a boil. Reduce heat to low. Simmer stirring occasionally until lentils are soft - 20-40 minutes - water to keep lentils simmering in creamy sauce. Discard bay leaf. Add salt and pepper.

    Love coconut and curry? This is divine! Again...why add EVOO when you can simmer onions in a bit of coconut milk? :)

    Very Good
    I like it! I didn't have any fresh ginger, so I added about 2 tsp of ground ginger instead. Also, the only red peppers I had on hand were a jar of fire-roasted red peppers, which seem to be going nicely. I was also out of curry paste, so added curry powder (just had to guess the amt). Still good!! - 10/1/09

    Very Good
    Made without shopping, so without the red pepper, with garlic powder instead of real garlic in a pinch. I cooked longer, as my lentils didn't seem to cook this fast. Needed significant water (sorry I didn't measure), but very yummy! Added soy sauce too. Will make this again. - 3/26/09
