Ingredients

4 Chicken breasts
1 Bag Broccoli
1 Can Cream of Chicken soup
0.5 Cup Mayonnaise
1 Bag Cheddar Cheese
Directions
* Boil chicken breasts for 1 hour.
* Boil the broccoli for 20 minutes.
*Break up the chicken into pieces and place at the bottom of a glass pan.
*Place the cooked broccoli on top of the pieces of chicken.
*Mix one can of chicken soup and ½ cup of mayonnaise together. Stream the mix over the chicken and broccoli.
*Sprinkle the cheddar cheese on top and bake for 30 minutes at 350 degrees.

Delightfully surprised...yummy! I substituted low fat mayo and cheese and also used low sodium soup. I found by adding 1/8 cup milk, the base became smoother and easier to pour over the broccoli/chicken. I will definitely make again and will try adding a cup of long-grain rice! Rich in taste! - 3/6/09
