Ingredients

1 lb boneless, skinless chicken breasts
1 (16oz.) bottle chunky salsa (I like mild Pace)
3/4 C. Cheddar cheese
1 (8oz) can corn
Directions
1. In a large baking dish, pour a small amount of salsa on the bottom of the dish and sprinkle some corn.
2 . Trim off any excess fat off chicken breasts and place on top of the salsa/corn mixture in the dish.
3. Pour the remaining salsa and corn over the chicken and cover with foil.
4. Bake at 350 for 45 minutes
5. When done, sprinkle the cheese over the chicken and place the oven on Broil and cook, uncovered, until the cheese is melted and slightly browned.

This was wonderful!! I doubled the recipe because I have a large family, and I added the black beans that were suggested. I also used frozen chicken tenders instead of chicken breast. It required an extra bit of baking time, but ooohhh, was it worth the wait! It was awesome! - 7/27/09

Made this tonight. Very tasty! I used frozen corn, a 15 oz can of black beans & fresh salsa. Also made my own "chips" from whole wheat tortillas that I cut, sprayed with Pam & sprinkled with garlic salt. (I should not have left them in the oven on broil, tho!) - 3/10/09
