Introduction

Ingredients

    1 Cup White Rice
    1 Cup Diced Pork (small pieces, fat removed)
    1 Cup frozen Mixed Vegetables
    1/4 Cup Diced Onion
    2 Eggs
    2 tbsp Lite Soy Sauce
    2 tbsp Canola Oil (separted)

Directions

1.) Heat 1tbsp of oil and add onions. Cook about 3minutes and add the rice. Stirring frequently for about 5 minutes.

2.) Push rice against the sides and add the other tbsp of oil and add the mixed vegetables and diced pork to center of pot. After a minute or so start mixing it with the rice. Stir frequently for about 5 minutes.

3.) Once again push the rice to sides and scramble the eggs. When done mix with the rice and add the soy sauce. Mix well.

    Excellent!! Made this for my fiance and myself one night for a late dinner after the kids ate at my mothers and then came home and went to bed. Was really pretty easy to make and didnt take very long either... My fiance has requested it be added to our usual rotation! - 3/16/14

    I tend to actually cook the pork and set it aside on a plate, then scramble & cook the eggs, add the veggies, add the pork back in and then add the rice. I also add sriracha to give it a bit of heat. Delicious! - 7/23/13
