Ingredients

    Slaw:
    * 1 small cabbage head, shredded
    * 1 1/2 cup Sweet corn, fresh or frozed
    * 1 small Red bell pepper, diced
    * 1/2 cup Cilantro, raw, 1/2 cup minced
    * 1/2 cup green onions, chopped

    Dressing:

    * juice of 1 lime
    * 2 tbsp Rice Vinegar, 2 tbsp
    * 2 tbsp light vegan mayonnaise
    * 1.2 tsp ground cumin
    * 1/2 tsp garlic powder
    * 1/2 tsp cayenne pepper
    * 1/2 tsp chili powder

Directions

Combine salad ingredients into a large bowl. in a small bowl whisk together dressing ingredients until smooth. Drizzle over salad and toss. Let sit in refrigerator for 30-60 minutes before serving.

    This was good. I typically like a lot of dressing so I might be hard to please. If I try this again, I will have to add some more lime and/or vinegar so I don't add more calories, but I needed more dressing... - 3/8/10
