Introduction

I make fried rice quite often - any time I have leftover cooked rice, actually. This time I also had a leftover pork chop, but you can leave it out of course. The vegetable amounts are approximate, I just use what I have. I make fried rice quite often - any time I have leftover cooked rice, actually. WOW! This is exceptionally good. Not too happy with the chopping, but would definitely make it again. I reduced the olive oil by about half, still had an excellent flavor. - 6/19/09

Really enjoyed this recipe! I had sweet peppers on hand, so used those instead of carrots. Used two eggs. Versatile recipe! Thank you! - 6/19/12
