Introduction

Number of Servings: 4

Ingredients

    1 lb small red or potatoes
    1 cup water
    1 chicken bouillon cube
    2 cloves garlic
    3 tablespoons chopped fresh parsley or 1 tablespoon of dried parsley

Directions

Wash and cut potatoes into 1 inch cubes. Do not peel.
Cover with water. Bring to a boil and simmer until cooked, about 10 minutes.
Meanwhile, bring 1 cup of water to a boil and dissolve bouillon cube in it. Remove from heat. If using dried parsley, add it to bouillon.
Drain potatoes and return briefly to the saucepan to remove excess moisture.
Mash with a potato masher, or mix on low with an electric mixer. Add bouillon mix a little at a time and then whip potatoes.
Use garlic press or finely chop garlic cloves. Add chopped garlic and fresh parsley to the potatoes and mix until blended.

    FABULOSO! I am going to make this probably once a week (now that I have a new mixer!) Hubby loved it too! I did bake the garlic before adding it though, and drove our taste buds wild smelling it. I probably added more garlic than it called for, but I am Italian, and I love garlic! - 10/31/08

    I tried these tonight and my family loved them, even my very picky husband. I had read the comment about missing the butter taste, so I used a little I Can't believe it's Not butter spray, and they were very good! I will definately be making these again! - 1/6/09

    This was pretty good and easy to make but not my favorite. I guess I just prefer the buttery taste of mashed potatoes. I didn't really like the garlic too much (and I LOVE garlic!)... maybe next time I'll roast the garlic before adding it to the potatoes. - 8/2/07
