Ingredients

    Chicken Broth, 12 cup (8 fl oz)
    Chopped Chicken Breast, no skin 20 ounces (about 4 medium chicken breasts)
    Carrots 2 cups chopped
    Celery, 2 stalks chopped
    1/2 of 1 Green Pepper chopped
    Onions, raw, .5 cup, chopped
    Canned Tomatoes, 2 can (I prefer diced)
    Corn Tortillas, 6 tortilla, medium
    Garlic, 6 tsp
    Coriander seed, 1 tbsp
    Cumin seed, 1 tsp

Directions

Add the ingredients 1 at a time and let them simmer lightly for a couple hours. You could also use a crock pot. Or if you are short on time use a regular stock pot and boil for a shorter amount of time. However the best flavor is slow cooked.
I like to add other ingredients afterward but don't forget to calculate those separately.
My favorite additions........
rice
potatoes
light sour cream
cheddar cheese
tortilla chips
cilantro (not my favorite but most people love it in their soup)
Makes about 12 - 2 cup servings. I've never gauged it perfectly so I could be off by 30 calories or so in the calculations but this is a pretty low cal soup to begin with, a very safe bet.

    To make a low sodium soup just use the broth from the chicken breast that you are going to use. Just cook them with water and a little bit of salt. There you go you have your chicken broth, natural, no canned. - 1/13/11
