Ingredients

    Nonstick cooking spray
    4 cups of butternut squash, cut into cubes
    2 medium onions, chopped
    2 cups carrots, peeled and cut diagonally
    1 tbsp dark brown sugar
    1/4/ tsp salt
    black pepper to taste (optional)
    1 tbsp butter, melted

Directions

Preheat oven to 400. Line large baking sheet with foil and coat with cooking spray. Arrange vegetables in single layer on foil; coat lightly with cooking spray. Sprinkle vegetables with brown sugar, salt and pepper, if desired.

Bake 30 minutes. Stir gently; bake 10 to 15 minutes more or until tender. Remove from oven. Drizzle with butter; toss to coat.

    This was fantastic. I used a dribble of olive oil up front instead on non-stick spray and left off the butter at the end. I loved the sweetness of the roasted onions and carrots along with the squash. I will definitely make this again. - 9/11/10

    I took my squash and sliced in crosswise into 1 inch slices. I baked it on a dish with a little olive oil at 400. About 30 min and when done, I drizzled a little honey on each slice. Very good. I will try the above another day. - 12/2/09

    I used olive oil because I was too lazy to melt butter, and it still tasted fabulous. As long as I can get precut butternut squash (my cheap knives can't dent fresh, whole squash), this will be a regular on my table. - 10/29/07

    LOVE this. Simple, no odd ingredients. I omitted the brown sugar, used a bit less onion, and it was quite tasty with a natural sweetness. If you cut your squash into fairly small cubes, it only takes 30 minutes to bake. Yum! - 11/16/12

    This is fabulous! I also used sweet potato instead of carrots (this adds 34.88 cals per serving, but worth it). By melting the butter and putting it on at the end, it really adds to the taste. I didn't think the T of sugar would do much, but it brought out the sweetness of the veggies pefectly! - 1/16/08
