Ingredients

Nonstick cooking spray
4 cups of butternut squash, cut into cubes
2 medium onions, chopped
2 cups carrots, peeled and cut diagonally
1 tbsp dark brown sugar
1/4/ tsp salt
black pepper to taste (optional)
1 tbsp butter, melted
Directions
Preheat oven to 400. Line large baking sheet with foil and coat with cooking spray. Arrange vegetables in single layer on foil; coat lightly with cooking spray. Sprinkle vegetables with brown sugar, salt and pepper, if desired.
Bake 30 minutes. Stir gently; bake 10 to 15 minutes more or until tender. Remove from oven. Drizzle with butter; toss to coat.

I made this last night for dinner, OHHHH EMMMMM GEEEE, they were fabulous. So full of flavor and I LOVE the blend of the flavors. For me and the Hubby it was a dish that we didn't want to stop eating. I only made half the recipe.. wishing I made the full batch! We love it; & will make it often. - 9/4/13

This is fabulous! I also used sweet potato instead of carrots (this adds 34.88 cals per serving, but worth it). By melting the butter and putting it on at the end, it really adds to the taste. I didn't think the T of sugar would do much, but it brought out the sweetness of the veggies pefectly! - 1/16/08
