Ingredients

    1 Box Spice Cake Mix
    1 15 oz. Can Pure Pumpkin
    1 Cup of Water

Tips

For Valentine's Day, bake in a heart-shaped muffin tin.


Directions

Mix together one box of spice cake mix, 1 cup of water, and 1 can of pumpkin. It may help to mix the water into the mix before adding the pumpkin. Transfer batter to a muffin tin. Bake 18 - 21 minutes or as directed on the spice cake mix box. Makes 24 muffins/cupcakes.

    I love these muffins, but make them slightly different. I use 1/2 cup water and 1/2 cup nonfat milk and add 1 egg. It doesn't change the calorie count all that much, but the egg improves the texture. - 3/29/08

    I've been making these for years in the form of cookies. I simply mix a can of pumpkin with a spice cake mix. Drop one tablespoon at a time onto a baking stone and cook 15 minutes. My whole family loves them. Sometimes I'll add a few chopped nuts if we're in the mood for more texture. - 2/1/10

    This is a great recipe - I modified it slightyl with 1/2c water and 1/2c natural applesauce - they came out perfectly moist and were a big hit at the family b-day party - I already have requests to make more! - 10/9/08

    I use one egg white for added protein as well as 1/2 shredded carrot and 3T chopped raisins. These are fablulous and all my kids and their friends love them and they are mostly healthy. I want to find an organic boxed spice cake mix to use instead of the regular brands. - 5/12/08

    These were filling and pretty nutritious since I needed something I could grab and go. They were easy to make, too! Personally, I think that you should rate the recipes based on taste and nutritional value and keep your opinion on "instant stuff" to yourself. Not all of us eat all-natural food. - 3/14/07

    I make these all the time. You can use any kind of cake mix. I especially like devil's food cake mix. Also, if you are one that likes frosting, use a tablespoon or 2 of no fat/low fat cool whip. YUMMY - 4/30/09

    So yummy! Added pumpkin spice and raisins and walnuts and a splash of soy milk. Very creamy texture, very tasty. New favorite :) I cooked them at 350 for closer to 35 minutes and they were perfect. - 7/2/12

    I have made these muffins for many years and had lost the recipe in a recent move. Was so thrilled to find it again. These are my family's favorite (especially the spice cake/pumpkin/pie spice variety), but we do like all the combinations that we have tried. YUM!! - 7/26/12

    Yummy. No spice cake mixes to be had in our local grocery so I used carrot cake mix. Then couldn't find my muffin tins so baked in 9X13 pan. It is very good! - 3/21/13

    I added half cup water and applesauce too. I make mini muffins, cool, freeze and place in ziploc bag. Toss some in lunch bag frozen and by time we get to work, school or gym, they are defrosted. People request them for gifts - 4/26/12

    I found a similar recipe recently, only it doesn't have the water. My family has enjoyed the muffins so much, and I am trying differnt cake flavors. Devil's Food cake mix turns out like brownie muffins! Will be making a new batch with Lemon cake tomorrow! - 4/23/12

    I liked this recipes as is. I took someone's advice and added an egg.....it made it so much better. Try the devils food cake mix with one egg and applesauce. If you add a little instant coffee in the batter it really amps up the great flavor of the chocolate. - 2/10/20
