Introduction

Great salad or chunky salsa. Great salad or chunky salsa.
Number of Servings: 12

Ingredients

    1 avocado, diced
    2 cups of corn
    2 cups of cherry tomatoes, quartered
    1/4 cup red onion, diced
    1 T. olive oil
    Juice of half a lemon
    1 T. salt
    1 T. pepper
    1 T. chili pepper or cayenne pepper


Directions

Prepare and combine all vegetables in a salad bowl.
In a small bowl combine spices and lemon juice. Whisk in olive oil.
Pour over and toss into salad.
Chill or serve immediately.
Makes 12 1/2 cup servings.

    I second adding edamame to this recipe, it doubles the protein and but doesn't compromise the taste at all. I'd recommend going really light on the onions, they really overwhelm the other flavours. - 4/19/09

    This was a great recipe. (I don't like onions, so I left them out.) I ate it as a side dish to a chicken breast. It was easy to make and I put the rest in the fridge for another meal. - 9/18/09

    I thought this was excellent. Although it would have been wonderful exactly as submitted, I added a little feta cheese and some edamanne as a personal touch and increased the health benefits even more :) So easy! - 9/23/07

    Just made this yummy recipe for supper. I amended it as I didn't have any corn in the pantry or freezer. I used a cup of Green Giant Steamers corn & black beans with brown rice. I'm sure it added a bit more sodium to the dish, but I did what I had to do to get supper on the table! - 3/9/16

    I added chicken to make it an entree salad and replaced the onions with some scallions (still not a great idea for lunch).
    The corn is too much for my taste. I will also add some peppers next time I make it. I added extra spices (to flavor the chicken), but it was still a bit bland.

    Yum! I make this with avocado,canned corn and a can of tomatoes with chilis for some zest, lime juice and garlic powder. Can add shrimp or crab, too for a light meal! Also, try slicing the avocado in half, mix everything else together and top the avocado half with it as an edible "bowl." - 8/7/12
