Ingredients

    0.25 cup (not packed) Cottage Cheese, 1% Milkfat
    1 large Egg, fresh, whole, raw
    2 tbsp chopped Onions, raw
    0.25 cup, strips Green Peppers (bell peppers)
    2 tbsp Newman's Own Bandito Salsa Mild, 2 Tbsp
    1 large Egg white, fresh

Directions

Beat eggs and cottage cheese together

Spray nonstick skillet with cooking spray. Cook peppers and onions on medium heat, just until tender - about 2 minutes.

Add egg mixture. Reduce heat to medium-low. Cook until set, stirring as often as needed. Top with salsa and enjoy!

1 serving (can easily be split to serve 2)

NOTE: in place of bell pepper, you can try any other veggie. I'll sometimes use julianned squash and onions in place of the bell papper.

    This was fantastic! I had large curd cottage cheese & while it was cooking, I mashed it-gave it a creamy consistency (couldn't taste the cottage cheese at all). I usually like my eggs plain, but this is so good and flavorful not to mention VERY filling,this is just what I needed, thanks for sharing! - 2/26/10

    This is yummy! Needs to be cut in half as the portion turns out to be enough for two people. I added diced mushrooms. The salsa on top gave it a nice kick! - 6/11/09

    The calories on this recipe seemed rather low considering it calls for 2 eggs plus cottage cheese. On checking the calories per ingredient, I found that it should be one egg only. Obviously when Sookie input the ingredients, she put ONE egg, but typed TWO in the directions. - 3/9/15

    Recipe does call for 2 eggs - 1 while egg, and 1 egg white.
    Ingredients and directions are listed correctly.

    Loved the addition of cottage cheese for extra protein. I also wanted more veggies so included spinach and mushrooms and tomato. After adding all that my Scrambled Eggs For One was certainly enough for two. - 7/31/13

    I just made this with no fat cottage cheese, organic eggs, 1/4 cup of crimini mushrooms and 5 pieces of asparagus chopped. I added a little onion powder and used 2 T of fat free cheddar. AMAZING - 8/16/12

    I try my own scrambles eggs I use 1/4 cup red bell pepper 1-slice tomatoe chopped 1 tablespoon of water mix it and micwave for 2 mins .. thats only 133 calories - 8/8/11
