Nutrition & Calorie Comments  

The calories on this recipe seemed rather low considering it calls for 2 eggs plus cottage cheese. On checking the calories per ingredient, I found that it should be one egg only. Obviously when Sookie input the ingredients, she put ONE egg, but typed TWO in the directions.
Loved the addition of cottage cheese for extra protein. I also wanted more veggies so included spinach and mushrooms and tomato. After adding all that my Scrambled Eggs For One was certainly enough for two.
I just made this with no fat cottage cheese, organic eggs, 1/4 cup of crimini mushrooms and 5 pieces of asparagus chopped. I added a little onion powder and used 2 T of fat free cheddar. AMAZING
I try my own scrambles eggs I use 1/4 cup red bell pepper 1-slice tomatoe chopped 1 tablespoon of water mix it and micwave for 2 mins .. thats only 133 calories
