You can duplicate the taste for a fraction of the fat if you substitute cocoa for bittersweet chocolate and use applesauce in place of some of the butter or oil. Ingredients

    3/4 cup all-purpose flour
    1/2 cup unpacked brown sugar, firmly packed
    1 Tbsp unpacked brown sugar, firmly packed
    3 Tbsp unsweetened cocoa
    1/2 tsp baking soda
    1/4 tsp table salt
    1/2 cup water
    1/4 cup unsweetened applesauce
    1/2 tsp vinegar, cider
    1 1/2 tsp margarine, melted
    1/2 tsp vanilla extract

Tips

For Valentine's Day, top each brownie with a fondant heart.


Directions

1. Preheat oven to 350F.
2. In a bowl, stir together flour, brown sugar, cocoa, baking soda and salt. In a second bowl stir together remaining ingredients. Pour water mixture over flour mixture and stir until batter is smooth.
3. Pour into a nonstick mini muffin tin coated with cooking spray, filling until half full. Bake until toothpick inserted in center of cupcake comes out clean, 18 to 20 minutes.
4. Remove from oven. Let sit 5 minutes, then turn out onto rack to completely cool.

    Yum! You'd never know these were low-fat! I baked them in an 8x8 pan and cut into 16 servings. So that made them 54 calories and .5 gr fat each. Some whipped cream would be so good on these. Next time I'm doubling the recipe and making them in a 9x13 pan. - 4/20/09

    I agree, these have more of a cake consistency. I added about 2Tbsp of instant coffee to intensify the chocolate flavor. It's a great base for anything, sugarfree jelly, peanut butter, etc. Thanks for sharing - 4/20/09

    They weren't chewy like the description said, but they were great. For the calories and fat it is worth it. I will add a little more cocoa powder next time but these were really good. They are light and fluffy, more like a cake then a brownie. - 4/5/09

    OH my this cupcake/brownie is AWESOME! I had to freeze some so hubby wouldn't eat them all. They thaw just as good as if you had not froze them at all I subst. spenda brown sgr.Thanks for the yummy recipe. - 9/2/09

    I used canned pumpkin instead of applesauce because I generally don't buy applesauce..very moist with the pumpkin! YUM! I also had some redi-whip on the side :) - 7/19/12

    YUM! I, too, put them in an 8x8 pan and it barely covered the bottom with a thin layer of the batter, so I wish I would have doubled the recipe. I also added 1.5 Tbsp of coffee crystals (like Texas sheet cake). Other than being super thin, these are great (even the batter was tasty)! - 10/19/10

    The batter was yummy enough that I doubled the batch. I've had some unopened applesauce for a while, knowing I'd get an urge to bake something lowfat. This recipe satisfies the chocolate craving AND is kind on the waistline. Thanks!! - 7/28/11

    I made this tonight and they turned out great! I made a few additions to the recipe. Instead of cider vinegar I used balsamic vinegar, and I added two tablespoons of mini semi-sweet chocolate chips. Fantastic! - 5/13/09

    Yummy! I made them in mini cupcake cups and added just a little more sugar. Also, I always keep some Motts unsweetened apple sauce around as it comes in handy 1/2 cup portions. I used 1/2 cup of apple sauce and 1/4 cup water, but I doubt it made any difference. - 9/15/12

    I would add a little more sugar... They were not as sweet as I thought they would be. I made a simple homemade chocolate icing to go on top and called it a cake! Icing - 4tbs. coco, 6tbs. skim milk, 1tsp vanilla, and 1/2 box of conf. sugar....boil first 3 then pour over sugar and spread on cake - 9/20/09

    Took a reviewer's suggestion of adding some instant cofee and oh yeah! awesome . ,I used Swerve brown sugar substitute.It's expensive but i use occasionally for these special recipes. When using the brown sugar substitutes, i find i have to use a "pinch" of bkg.powder to get a little lift. - 1/30/21

    These are so cute and just right to meet a craving for chocolate brownies. I make them and bring them to our Bananagrams weekly girls' night out. Everyone loves them and they don't have to feel guilty about having one or two. I think I may make them for our planned Christmas party night and decorate - 12/7/17

    I used half WW Flour and used vegan better than butter. They were moist and delicious and I'll definitely make again. One batch made 9 regular cupcakes, so about 93 calorie per serving. 22-23 minutes in the oven. Thanks for posting this. It made a nice Valentine's Day treat! - 2/15/15

    Very good for low fat, but I would agree with others that it's really like a cake - thus eating them with no frosting is a bit like cutting into a chocolate cake with no frosting on top - something is missing. At 72 cal/serv I know I can make a frosting and still be low fat/calorie - 5/4/13

    A quick and easy recipe! Pretty good for low fat cupcakes! They were like a cross between a cake and a brownie. I would add more cocoa next time, as they weren't quite chocolatey enough for me. I baked them into 24 mini cupcakes and they took 10 minutes to bake. Used malt vinegar, turned out fine - 5/4/13

    Doubled the recipe, subbed 1/2 flour for whole wheat flour, subbed 1/2 water for fresh brewed coffee, used Balsamic vinegar and cinnamon applesauce b/c that's what I had.     I made this recipe in a smaller portion because I would end up eating the entire batch. They were good, but I only cooked mine for 8 minutes because otherwise they were going to burn (must be the difference in ovens). The consistency was good, but I could have added more sugar. - 1/16/11
