Number of Servings: 6

Ingredients

    4 oz Egg Noodles (could go even lowerfat and use no yoke noodles)
    1 Tbs Canola Oil
    2 C. Chopped Ham
    1 Tbs. Chopped Red Pepper
    1/4 C. Chopped Onion
    1/4 C. Chopped Celery
    1 Can (10 3/4 oz) Cream of Mushroom Soup
    8 oz Reduced Fat Sour Cream
    1/2 C Fat Free Cheddar Cheese

Directions

Cook noodles according to package directions. Spray a fry pan with non stick spray and sautee the ham, red pepper, onion, and celery for about 5 - 10 minutes till soften. Remove from heat add cream of mushroom soup, and Sour Cream. Put into a lightly sprayed 1/2 quart casserole dish cover and cook for 25 minutes. Remove lid top with Cheddar Cheese and cook 5 more minutes till melted.

    This was very tasty! I had some leftover ham from Easter & it was a great way to use it. I think 6 servings would be pretty small though (we made 4), and the canola oil is counted in the calories but not used in the recipe. Otherwise, it rocks! - 4/15/10

    Absolutely excellent! I used no-yolk noodles and cream of celery soup since DH is allergic to mushrooms, and this was positively yummy! We'll definitely be making this dish again. - 12/30/07

    I thought this recipe was okay. Decent flavor but nothing spectacular. My biggest con is that it is six servings. DH and I made 4 servings and scoffed at how small even that was. While it was good, it isn't worth the calories for me again. - 10/16/13

    i made this yesterday and it was very good but the directions are missing some instructions as what do you do with the 1 TBSP of Canola oil, also how high do you set your oven, I don't think a 1/2quart casserole is big enough I used a 2 Quart casserole dish. Also what do you do with the egg noodles - 10/16/13
