Introduction

Ingredients

    2 cups diced cooked chicken breast
    10 oz. box of frozen spinach, thawed and drained well
    1/2 cup fat-free sour cream
    1/2 cup mayonaise
    1/2 teaspoon garlic powder
    1/2 teaspoon white pepper (or black)
    3/4 cup grated parmesan cheese
    1/4 cup l/f mozzarella

Directions

Preheat oven to 350. Combine the chicken and spinach in a greased 8"X8" baking dish. Mix remaining ingredients together. Mix about a 1/4 of the sauce mixture with the chicken and spinach mixture and spread out across the bottom of the dish. Spread the rest of the sauce mixture over the chicken and spinach. Bake, uncovered, for 40 minutes or until top is nicely browned. The browner the top is (not burnt though) the better this dish is.

    Delicious but quite rich. I added mushrooms and used half fat mayo. I think next time I'll use about half the cheese recommended in order to cut back the fat a bit. - 1/16/12

    This was FABULOUS. I cooked the cubed raw chicken in some olive oil with red onions, mushrooms, salt and pepper. When it was almost done I added 2 minced garlic cloves. I mixed everything together, rather than layering, and sprinkled the top with a little paprika. I also added cream to the sauce - 7/10/12

    Loved this! Used nonfat plain greek yogurt in place of 1/2 the mayo, and added some milk and garlic. Used fresh spinach and a bit less parmesan. Served over whole wheat pasta and cooked carrots. Will definitely make again! - 1/21/13

    This was so good!!!! I cooked chicken tenders and cubed them they I mixed in the remaining ingredients, rather than layering them. I then put it in the fridge and popped it in the oven when I got home from work. I served it over the top of wheat couscous. I topped with fresh diced tomatoes. Yum - 7/8/11

    I cooked this for my family last night. It was a HIT!! I added milk to make it creamier and put it on a bed of linguini. Plan on adding mushrooms next time! WONDERFUL! Whole family loved it!! I doubled it and it was all gone! - 1/19/11

    My family loves this recipe. My daughter requests it all the time. I usually cook the chicken in my crockpot all day and then shred it when I get home. I also put two teaspoons of minced garlic in the cheese mixture. Other than that I make everything else the same as recommended. - 7/30/13
