Ingredients

    1/3 cup spenda for cooking
    3 Tablespoons cornstarch
    1/4 tespoon salt
    2 1/2 cups skim milk
    1 1/2 teaspoons vanilla

Directions

1. In a sauce pan combine the splenda, corn starch and salt. Add milk and cook over medium heat, stirring constantly until mixture thickens. Add vanilla and continue to cook for 2-3 minutes. chill until firm.

    I used 1 beaten egg for color and tempered it before adding it back - also increased vanilla to 1 tablespoon to get that great vanilla flavor. Much better. - 9/5/11

    O.K.
    My pudding didn't firm up, but I've made a similar recipe with 1/2 c less milk and it firmed up right away. I also thought it was way to sweet, I think next time I might use 1/4 c. of Stevia instead of 1/3. - 5/18/14

    Incredible!
    I was making a trifle. I hate boxed pudding. This is soooo much better. I did add the egg as suggested and increased the vanilla to one tablespoon. Excellent and firmed perfectly . - 7/4/13

    I used non-fat milk and it firmed up just fine. Perhaps you were a bit sort on the corn starch or didn't stir for long enough. It needs to really come to a boil. - 3/15/12

    I didn't really care for the taste of cornstarch to thicken the milk.... It didn't taste like real vanilla pudding to me. :-( I think next time it's worth just adding an egg, cook it a bit longer and not use all that cornstarch. But I loved the sugar free idea. - 2/24/09

    I made this using Silk Light Vanilla Soy Milk; pretty tasty. Pretty quick and easy to cook, too. I used left-over, non-recyclable plastic dishes from Smrt One's desserts to hold 1/2 cup servings. - 5/1/08
