Introduction

I stole this from sparkpages nutrition planner and I couldn't get it to add to my nutrition if it wasn't planned on that day...so I decided to add it to the recipe box! Number of Servings: 6

Ingredients

    1 T olive oil
    1 medium onion, chopped
    1 garlic clove
    2 medium tomatoes, chopped
    2 bunches of spinach
    1/2 tsp salt

Directions

In oil, fry onion, garlic, and tomato

Add spinach & salt

Cover & simmer for 5 minutes, just until tender

    Really liked this dish. Very easy to prepare and leftovers makes a nice omelette filling with a bit of cheese. Heck, add some Parm. even when it's not in an omelette! - 2/28/11

    This is delicious, but I omitted the onion. I also topped this with a dozen or so baked shrimp/serving. Savory is the perfect adjective for this dish! - 8/7/12

    I have a package of KALE. I will try it with that. Sometimes spinach is too slimey for me and kale is loaded with nutrients. - 12/7/11
