Introduction

Ingredients

    1 pound boneless, skinless chicken breasts
    1 (10-ounce) package frozen broccoli spears
    1 can lower-sodium cream of mushroom soup
    3 tablespoons fat-free mayo
    1 cup reduced-fat shredded cheddar cheese

Directions

Boil the chicken breast until done and drain. When cool enough to handle, cut into 1-inch pieces. In a square or round casserole dish, mix mayo and soup. Add broccoli and chicken and mix well. Sprinkle with cheese. Bake at 350 for 20 minutes or until cheese is melted. Serves 4.

    Great, easy, tasty recipe! I don't eat carbs for the evening meal and have a hard time finding meals that are easy, tasty, and filling--this totally fits the bill! I used lowfat cream of chicken and fresh steamed broccoli, and added onion and parsley to the water when boiling the chicken. New fave! - 2/12/08

    Boiling Chicken will never cease to confuse me. lol.
    Now, BROIL or bake the chicken and you are adding some grilled flavor, boil it and you are just making rubber cubes. That being said, this recipe (minus boiling the chicken) was super easy and yummy and just what I needed on a cold snowy day. :)

    My family and I absolutely loved this recipe. I substituted crm of mushroom for fat free crm of chicken and fat free crm of broccoli and mixed mozz cheese and cheddar cheese and it was absolutely delish. Thanks for the great recipe. - 5/23/09

    YUM! I had to make a couple of modifications based upon what we had in the house: used 98%FF Cream of Broccoli and 1/2 shredded mexican blend cheese and 1/2 shredded mozzarella cheese. Served it over brown rice. DELICIOUS and SIMPLE! We will be having this again, no doubt. Thanks! - 3/5/08

    Fantastic! I'm not a big fan of recipes that are too easy...usually they are tasteless, so I was reluctant...but it's very tasty. I seasoned the chicken, cooked it in the oven, and used fresh broccoli, and it was delish. Thanks for sharing =) - 9/25/07

    This was very tasty and simple to make. We made a minor substitution - 98% fat free cream of chicken soup instead of mushroom soup. Next time will stir the cheese into the mixture, as it clumped on top. Will definitely have this again! - 3/5/08

    Fabulous! I used 98% fat free cream of broccoli cheese soup with a 1/3 cup skim milk. I topped it with 1/2 cup panko bread crumbs and 1 tbs melted smart balance lite. It was amazing! Thank you :) - 5/19/10

    This was a quick, easy and filling idea for dinner. I used precooked chicken and substituted fat-free sour cream for the mayo (it was what I had on hand.) It was a tad bland for me, so I may add some spices next time, but it's a great time-saver to add to my weekly rotation. Thanks for the idea. - 11/14/08

    I make this on a larger scale with both broccoli and cauliflower, and one can each cream of mushroom and cream of chicken soup. Sometimes I leave the chicken out and grill it on the side. Yummy! - 3/20/07

    So good! I used precooked diced chicken because I was short on time, and cream of chicken soup instead of cream of broccoli (my husband was afraid it would be way too broccoli-y for his taste) and it was a hit all around. My daughter even liked it, and she's SO picky! - 3/11/08

    I decreasd the mayo and increased the cheese, Delish! I made brown rice and mashed potatoes to give my family a choice, it tasted great with both. My husband hates broccoli but between you and I, I think he licked the plate. - 10/15/08

    Liked Jessicca2872's idea. I used a bag of California Medley mix (includes carrots), I had it on hand and half a can of each soup, calories stay about the same as original recipe. Delicious! - 3/22/07

    I thought this was a great simple meal for my husband and I. It was exceptional on calories, etc. It was also a very good portion. We added green bell pepper, red pepper and fresh chives to up our veggie count. Very, very good. My husband has already requested it again. - 12/7/10

    I tried this for dinner tonite and it was very good! I substituted the mushroom soup with celery soup and not as much mayo. One serving over brown rice and it is a complete meal. I am saving this one for future use. Hubby loved it too!!! - 4/24/07

    After reading many of the reviews, I mixed the cheddar cheese in with everything rather than put it on top and I tried sprinkling bit of bread crumbs on top. This was hearty and delicious. My husband rates it 4 stars, I rate it 3 because it needs "something", what, I don't know. It was good though - 1/9/11

    I enjoyed this. I made the recipe to the letter, & cooked brown rice on the side to add to it (love me some starch!) Very easy to make and I'm sure I'll be making it again.     This was a good recipe but kind of bland. Next time I will add some spices to it and use another can of soup. I didn't have any cheddar on hand so I used shredded mozzerella. I loved how easy it was to make! Perfect after a long day at work!!! - 7/30/08

    My family and I really liked this! I read some of the other reviews and added chopped onion to the chicken while it was cooking. I also added the cheese to the mixture, then topped with panko bread crumbs. We'll definitely use this reicpe again. - 12/5/10

    This was very good. I didn't have any fat free mayonnaise but substituted low fat sour cream. Not sure if it had the same effect. It seemed a little dry--not saucy enough. Next time I would maybe add some milk to the soup. But very good! Boyfriend ate two servings! :) - 10/22/07

    I haven't tried this version, but chicken and broccoli casserole is a family favorite. Our recipe uses cream of chicken soup. There's a also a topping of crushed Ritz crackers and melted butter that would have to be admitted for this site. - 2/4/11

    I thought this was pretty good. I added some seasonings. I mixed the cheese in and spread some panko over the top.     This meal I have made three times this week already and I love it! Definitely have to add alot of salt and pepper at the end which takes away the blandness and brings out the flavour. Definitely 5 stars out of five... It's my current favourite meal, and I add chopped spinach! - 11/12/10

    The first time I made this I added a soup can of water and it was too watery. I made it again with no water and it wasn't enough. Next time I will try a half or quarter can of water. It was good though. My daughter even asked me to make it again. - 2/25/10

    This is VERY yummy. I've used Cream of Chicken too, and it works just as well.
