Such a tasty cake! For a healthier version - Use egg beaters instead of whole eggs, or egg whites. Substitute unsweetened applesauce for the oil. Add the dry pudding mix directly to fat free or lite cool whip and combine till dissolved. Either way, this cake is amazing - 4/22/09

Use 2 different jellos, Red and green. Cut the cake into 2 pieces, put a different color in each, put cool whip between. I make this all the time for Christmas.

I grew up eating Jell-o cake and love it! My mom used to make it every summer. She used a toothpick to make even rows of holes before pouring the jell-o on top. - 4/29/09

Besides making a healthier version, keep in mind that 1/12 of a cake is a big serving! I've been looking for a lower sugar version of this recipe! I tried making the glaze with Splenda & cornstarch combined in the blender & adding lemon juice -for a lemon cake. It was OK, but I'd like to try this! - 4/24/09

This cake is a winner with our family! Eventhough we never tried the altered "healthier" version, we found it to be just as yummy, no matter what color jello you use. - 4/17/09

I haven't made this particular recipe but I have had Jell-O cake before and I love it! One way to make this a little healthier is by leaving the vanilla pudding topping off but still using the cool whip. - 4/22/09
