Ingredients

    1 cup old-fashioned rolled oats
    1 cup oat bran
    2 cups 2% milk
    1 cup whole wheat flour
    1/2 cup flaxseed meal
    1 cup brown sugar
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    2 tsp. cinnamon
    1 tsp. ginger
    1 tsp. nutmeg
    1/2 tsp. cloves
    1-1/2 cups unsweetened applesauce
    2 eggs
    1 cup raisins, plumped in hot water and drained

Directions

Soak the oats and oat bran in milk for 30 minutes to 1 hour. Preheat the oven to 400 degrees. Spray muffin pans with cooking spray. Combine the oat mixture with the applesauce and eggs and mix until combine.
In a separate bowl combine all the dry ingredients and mix just until combined. Stir in raisins. Do not overmix. Spoon muffin mixture into 24 muffin cups. Bake for 20-25 minutes or until done. Makes 24 muffins.

    This sounds delicious and a sneaky way to get more fiber into my family. I'm gonna go further tho and sub sf brown sugar and also soy milk to lower the calories and carbs. It won't be as yummy as the original, I'm sure but prob still good. Thank you for sharing! - 8/20/08

    I made it this morning at 5 am and had no raisins, so I did without. I also left out the salt, as I'm low-sodium. I changed the brown sugar to 3/4 cup Splenda. They were great! I gave some to friends and was asked for the recipe. I will make these again and maybe try some cut up dates. Yum!!! - 11/16/10

    Flavorful and moist. Be sure to bake entire time indicated and perhaps a bit more to ensure the bottom of muffin finishes cooking. I added blueberries to half the batter and made bread-style loafs as this made 24 muffins ++++! Will freeze for handy, on-the-go breakfasts. Thanks for sharing ! - 5/29/10

    Wonderful! I Substituted Skim Milk for 2% milk - Splenda Brown Sugar Blend for sugar and used half stated amount. I added Craisin, raisins, and dates to the oatmeal soak! I also used MINI MUFFIN Tin! DELICIOUS blend! Thanks so much for a marvelous recipe! - 1/5/09
