Introduction

Ingredients

    1 lb ground Italian sausage
    2 tsp crushed red peppers
    1/2 large diced white onion
    2 slices of bacon cut in to pieces
    3 chopped or pressed cloves of garlic
    6 cups water
    2 cubes of chicken bouillon
    2 lbs cubed Russet potatoes, or about 6 large potatoes
    3 cups 2% milk
    1/2 a bunch of kale

Directions

1. Brown the sausage in a large pot with the crushed red peppers. Once it is browned transfer it to a bowl and refrigerate leaving the drippings in the bottom of the pot.

2. Add the bacon to pot and cook it just to done. Then add the onion and garlic and cook 'til tender (do not let it carmelize them).

3. Add the water and bouillon cube and bring to a boil. Add the potatoes and cook 'til the are soft about 20-25 mins.

4. Stir in the milk and bring back up to a gentle boil tear the kale into bite size pieces omiting the large stems. gently boil till the kale is tender and season to taste.

Make aproximately 9 1 1/2 cup servings.

    sorry bout that you add the sausage back in after you get done cooking the potatoes or you could leave it in if you want

    So delicious! My boyfriend said he thought it was better than the one at Olive Garden. I also used spicy turkey italian sausage and turkey bacon and still thought it was great. - 10/12/09

    One of my favorites! I think I found it on recipezarr or another copycat site. I use skim milk, italian turkey sausage and then use some hormel real bacon bits to cut down the fat and oil. Also, I sometimes substitute fresh spinach if I can't get my hands on Kale. Great Recipe! - 8/29/09

    This was great! My husbands favorite soup to eat out. I'm so glad I can make it for him at home! The only things I changed was just a dash of pepper flakes and I had spinach so I used that instead of kale. - 3/3/12

    Would have been a LOT better had this recipe made it clear that I needed the actual red BELL pepper and not the seasoning "crushed red pepper" lol because mine turned out WAY to spicy to even eat! - 10/22/10

    I made this for supper tonight. I did not add the bacon. I aslo used 1 cup canned evaporated skim milk and mixed w/3 Tb. flour and added to soup to thicken the soup. I stirred for about 10 min. then I added the kale. - 2/28/21
