Ingredients

    1 lb. beef tenderloin tips
    1 1/2 cups whole wheat bow tie pasta
    1/2 lb. mushrooms, sliced
    1/3 cup chopped onion
    2 teaspoons olive oil
    2 tablespoons whole wheat flour
    1 (10.5 oz.) can beef broth

Tips

Garnish with a few sprinkles of parsley for a touch of color.


Directions

1. Cook pasta according to package directions.
2. While pasta is cooking, trim fat from meat and cut into 1 x 1/2" pieces. Spray a large skillet with vegetable cooking spray. Heat skillet over medium-high heat until hot. Add beef and stir-fry 3-5 minutes until outside surface is no longer pink. Remove from skillet.
3. In the same skillet, add the olive oil and heat until hot. Add the onions and mushrooms and cook until tender, about 2-3 minutes.
4. Stir in the flour. Gradually add 1 cup beef broth, stirring until blended. Bring to boil. Cook and stir 2 minutes. Return beef to skillet and heat through. If stroganoff appears too thick, add more beef broth to thin as desired.
Salt and pepper to taste.



Serve beef mixture over pasta. Add dollop of sour cream, if desired.





Makes 4 servings (approx 4 oz beef and 3/8 cups pasta)

    Here's what I do to make this spectacular: add a couple of Tablespoons of dry sherry, a pinch of freshly grated nutmeg and thicken it with a cup of Greek NF yogurt at the end, instead of flour. Better for you and added calcium! - 2/7/08

    YumYumYum! I added about 1/2 cup plain non-fat Greek yogurt stabilized with a tablespoon of flour because I didn't have any sour cream in the fridge. It came out wonderful and creamy. Comfort food for these early fall days! - 9/30/08

    Sounds good. Will add some garlic, worcestershire sauce and use 0 sodium beef bouillon. Always serve stroganoff over noodles, so will use whole wheat ones. - 8/11/08

    I've always made something very similar to this, but used round steak. I add some carrots, and I don't use any sour cream. I found out ,that I don't need to use the flour for the meat, either. Browns nicely without it. - 2/7/09

    You can deglaze the pan used to cook the beef by adding the beef stock or red wine. onions and mushrooms can be added to beef while it's cooking. recipe needs garlic, either powder or fresh. add flour before adding wet ingredients to brown it and last thing put in is sour creme or yogurt. - 1/9/10

    The only way I've eaten stroganoff is with noodles, and round steak cooked a little longer is cheaper and tastes great and 1/2 c lowfat sour cream delish - 11/14/08

    Yummy! I took the suggestion to add a pinch of nutmeg and some red wine (I substituted about 1/4 cup red wine for part of the beef broth). I used a bit of extra flour to get a thicker sauce, and about twice the amount of onions. A small dollop of light sour cream after serving was a nice touch. - 12/7/09

    I added this recipe to my collection long before I tried it, but it was great. My husband can't digest beef so I had to wait until he was out of town. I usually use ground beef for stroganoff or turkey if my husband will be eating it. This one is a keeper. I will make again when I can! - 6/20/09

    This was very easy and fast to make. I used sirloin tip steak instead of beef tenderloin. I had to add more broth due to my meat having to cook longer but it still only took 25 minutes! My son who hates mushrooms and onions ate it with no complaint. I am definitely making this again! - 9/5/09

    I might like to try this. I use a beef broth mixture that my daughter told me about. Its not beef cubes but a beef crumbs made with real beef. They also have it in chicken although I wouldn't use the chicken for the stroganoff. - 7/23/09

    I found this receipe months ago on Spark. It is so much better with a higher grade of beef. I use 1/2 low sodium broth and 1/2 red wine. With a very small amount of additional flour you can leave out the sour cream and get a good creamy base. We eat this regularly. - 1/9/10

    In order to be stroganoff it has to have dairy. I used sour cream stirred in just before serving, it doesn't take much. - 1/30/20
