Ingredients

    1 cup all-purpose flour

    1 cup whole wheat flour

    1/2 cup sugar

    1 1/2 teaspoons baking soda

    2 eggs

    1 cup plain Stonyfield Farm Yogurt

    1/4 cup butter, room temperature

    1 teaspoon vanilla

    1 cup chopped strawberries, fresh or frozen

    1/2 cup blueberries

Directions

Preheat oven to 375°F. Grease a 12 muffin tin or line it with paper baking cups. In a large bowl, sift together flour, sugar and baking soda. In another bowl, stir together eggs, yogurt, melted butter and vanilla until blended. Toss the strawberries with the flour mixture.
Pour the egg mixture into the flour mixture and stir until the flour is just moistened. The batter will be lumpy. Spoon the batter into the muffin cups. Bake for 20-25 minutes, or until the tops are golden brown.

    Used wheat and almond flour, along with some flax meal to make it lower carb (11 g). Used regular sugar because I didn't have enough Splenda. Very good! - 7/13/13

    I tweaked this a tad to fit my needs. Used applesauce in place of butter. 1 C rhubarb and 1/2 C strawberries for the fruit. Got 15 muffins at 109 cal each and 1 g fat. Used non stick spray for the tins and had no problem w/ removal - nothing stuck! :) - 6/15/11

    These are really good! I added some wheat bran to increase the fiber and just put in 1 1/2 cups of strawberries since I don't like blueberries. So good! My husband loves them! - 7/30/09

    I also changed the all-purpose flour with almond flour and ground flax seed. Ups the fiber, since the all-purpose flour has none. Changed the sugar for applesauce. Flax needs a little more moisture. - 2/13/19

    I didn't have any plain yogurt so I added 6 oz of blueberry yogurt and 2 ounces of vanila. Sprayed tin with pam baking spray and they popped right out. The batter seemed dry to I added a tinsy bit of milk. I also added walnuts on top Yummy. - 3/3/13

    I used all strawberries. I got 18 regular muffins instead of 12. I used muffin liners so I wouldn't have to cut back on fruit but will probably add a little extra fruit next time. I took suggestion of walnuts on top, which added great crunch. - 4/22/11

    Needs some flavor so I added some chai garam masala spice mix and a bit of salt (that helps bring sweetness forward in your palette). The sticking problems I encountered were by fruit pieces that were in the side wall so do not over do it on the fruit. - 7/14/10
