Ingredients

1 Pound Boneless Skinless Chicken Breast, cut into bite-sized pieces
1 Tbsp Olive Oil
2 Packets of McCormick White Chicken Chili Seasoning Mix
2 Cans (15.5oz) Great Northern Beans, undrained
1 Can (15.25oz) Whole Kernel Corn, drained
1 Can (14.5oz) Chili Ready Tomatoes, drained
2 Cups Water
Directions
Add Olive Oil to large skillet, over medium high heat,
Add Chicken pieces. Stir while cooking 3-5 until no longer pink.
Add remaining ingredients.
Bring to boil.
Cover and reduce heat.
Simmer, stirring occasionally, for 10-15 minutes.
Serve immediately.
(Optional: Add shredded cheese to each serving.)

Fabulous! I used this instead of the seasoning packet:
1 teaspoon freshly ground pepper
1 teaspoon oregano
1 teaspoon ground cumin
1 teaspoon seasoning salt
1 teaspoon cayenne pepper
1 chicken bouillon cube, crushed into powdered form
Allows control of heat and sodium.

I agree that the recipe actually makes more than six servings. I didn't actual measure the servings. I was kinda just going off what the seasoning packet says. You could also easily half the recipe. I think I'll adjust the serving size. Thanks for the feedback.

My wife really liked it too. "A little spicy" was exactly her comment when I asked if she liked dinner. But she didn't complain when she was eating the last of it. That's crazy!! I just posted this recipe last night and you found it!! Thanks for the 5 stars.

I did this a lot differently, but it was SO good! I used rotel, Bush's chili beans (mild), navy beans, mexicorn, and the spices listed in the previous poster but subbed red pepper flakes for cayenne. I also added garlic and a little cornstarch at the end to thicken it. Served with corn bread! YUM! - 2/9/11

This is a great recipe to make in the crock pot. Saute the onions first, add diced chicken to brown. Seasoning - 2 garlic cloves minced, 1 tsp cumin, 1 tsp red pepper, 1 tsp black pepper, 1 tbsp chili powder, and 2 pkgs herb ox sodium free chicken broth. Rinsing veggies cuts the sodium too. - 9/11/09

This was so good and it was so easy to make! I didn't drain the tomatoes and I added canned black beans along with the 2 cans of Northern; I think that it stretched the recipe even further! Had it for dinner and had some left for Hubby and I to take to work for lunch! Will make again and again! - 5/1/09

I purchased the McCormick seasoning at Walmart (where the gravy, chili, taco, etc. seasoning packets are). If you still can't find it, try GILLIEWEED's seasoning mix (posted on 4/29/09). Good luck.

Haven't made it yet but I can't do spicy at all -- what makes it spicy, the seasoning mix? How could you get around that? My husband loves chili and I'd love to find one I could stand using chicken. - 4/28/09

Yes, the seasoning packets make it spicy (for the most part). The chili-ready tomatoes have some flavor, but not much spice. You could try GILLIEWEED's season mix (posted on 4/29/09).

I am making this again for my family but am trying it in a slow cooker. I will brown the chicken pieces and add all the other ingredients on low for at least four hours. - 4/27/09

Thanks for the feedback. Originally, when I entered this recipe, I wasn't planning on sharing it, so I omitted the can sizes (I always purchase the same size cans). I've gone back and modified the recipe to show the size of the cans. Thanks.
