Fabulous! I used this instead of the seasoning packet:
    1 teaspoon freshly ground pepper
    1 teaspoon oregano
    1 teaspoon ground cumin
    1 teaspoon seasoning salt
    1 teaspoon cayenne pepper
1 chicken bouillon cube, crushed into powdered form
Allows control of heat and sodium.

So easy and quite tasty. Servings are huge. You could easily make this serve eight to ten. - 4/24/09

I agree that the recipe actually makes more than six servings. I didn't actual measure the servings. I was kinda just going off what the seasoning packet says. You could also easily half the recipe. I think I'll adjust the serving size. Thanks for the feedback.

My wife really liked it too. "A little spicy" was exactly her comment when I asked if she liked dinner. But she didn't complain when she was eating the last of it. That's crazy!! I just posted this recipe last night and you found it!! Thanks for the 5 stars.

Great recipe. I used only 1 seasoning packet. I also substituted 1 of the cups of water with chicken broth and added canned roasted green chilies. Everyone loved it! - 3/21/12

I did this a lot differently, but it was SO good! I used rotel, Bush's chili beans (mild), navy beans, mexicorn, and the spices listed in the previous poster but subbed red pepper flakes for cayenne. I also added garlic and a little cornstarch at the end to thicken it. Served with corn bread! YUM! - 2/9/11

Sometimes I put this in a slow cooker on low. And I love the idea of using spices on hand rather than a spice packet. - 11/21/17

Awesome recipe. Instead of 2 cans of Northern beans I used 1 can of Northern beans and 1 can of Black beans. I also added a little cilantro and it tasted just like Tortilla soup without the added calories of tortilla. I love this recipe and I have been sharing it. - 1/25/13

I make this often. Family raves about it too. I use 1 packet of seasoning. This time I used pork roast cubed, and added boiled potatoes and carrots. I also saute'd onions and celery with the meat before combining all together. - 1/22/10

This is a great recipe to make in the crock pot. Saute the onions first, add diced chicken to brown. Seasoning - 2 garlic cloves minced, 1 tsp cumin, 1 tsp red pepper, 1 tsp black pepper, 1 tbsp chili powder, and 2 pkgs herb ox sodium free chicken broth. Rinsing veggies cuts the sodium too. - 9/11/09

Great meal and easy to fix after a long day at work. Just a tad spicey for the kids, but the wife and I luv it. Very filling, one serving will do, had to top mine with chopped onions. - 5/5/09

This was a super easy dish to make, and my family loved it. I like my food really spicy, so I added an onion, more than a couple dashes of Tabasco, some fresh ground black pepper and a little more chili powder. - 5/2/09

I've been making this for awhile (since last year); and I love this dish. It's a simple one-pot meal; we top it with shredded non-fat cheese (1 tbsp) and a dollup or two of low fat sour cream. Yummy! - 5/1/09

This was so good and it was so easy to make! I didn't drain the tomatoes and I added canned black beans along with the 2 cans of Northern; I think that it stretched the recipe even further! Had it for dinner and had some left for Hubby and I to take to work for lunch! Will make again and again! - 5/1/09

I love this recipe, but I can not find the McCormick seasoning very easily. Where do you find it? - 4/28/09

    Reply from LRBARRIOS (5/3/09)
I purchased the McCormick seasoning at Walmart (where the gravy, chili, taco, etc. seasoning packets are). If you still can't find it, try GILLIEWEED's seasoning mix (posted on 4/29/09). Good luck.

Haven't made it yet but I can't do spicy at all -- what makes it spicy, the seasoning mix? How could you get around that? My husband loves chili and I'd love to find one I could stand using chicken. - 4/28/09

    Reply from LRBARRIOS (5/3/09)
Yes, the seasoning packets make it spicy (for the most part). The chili-ready tomatoes have some flavor, but not much spice. You could try GILLIEWEED's season mix (posted on 4/29/09).

I am making this again for my family but am trying it in a slow cooker. I will brown the chicken pieces and add all the other ingredients on low for at least four hours. - 4/27/09

Thanks for the feedback. Originally, when I entered this recipe, I wasn't planning on sharing it, so I omitted the can sizes (I always purchase the same size cans). I've gone back and modified the recipe to show the size of the cans. Thanks.
