Ingredients

    BATTER:
    1-1/3 cup whole wheat flour
    4-1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 cup sugar
    3/4 tsp. salt
    1-2/3 cup buttermilk
    1-1/2 tsp. vanilla
    FILLING:
    3 cups canned pumpkin
    1 cup milk
    2 eggs
    1/2 cup sugar
    1/4 cup brown sugar
    1 T. whole wheat flour
    1 tsp. cinnamon
    1/2 tsp. salt
    1/4 tsp. each ginger, cloves and nutmeg

Directions

Preheat oven to 350. Spray 9"x13" baking pan with nonstick spray. In a bowl, combine dry ingredients for BATTER. Stir in buttermilk and vanilla until smooth. Pour into pan and smooth.
For filling, in a mixing bowl, whisk together filling ingredients. Pour over batter; do not stir. Bake for about 45 minutes to 1 hour or until done. Yield 15 servings.

    Very Good
    Pretty darned tasty I say. I will take it to my weight loss group tonight to try! I did use splenda brown sugar instead of regular, added more flax (didn't have oat bran) and even addred it to the pumpkin mixture. I just ate it warm, small piece, and it is yummy. Like pumpkin! - 10/8/08

    I think I have a new favorite pumpkin recipe! I halved the recipe in an 8x8 pan, used whole oats instead of oat flour, and also added some toasted wheat germ. This was soooo delicious and perfect for fall, thanks for posting this! - 10/1/08

    I made this and all I tasted was the baking powder....is there really suppose to be 4 1/2 tsp? Did I make a mistake?...it would be much better if soda was lowered and or maybe eggwhite used. - 9/18/08

    All I can say is, was your baking powder lumpy? Because you shouldn't be able to taste it. Also are you sure you used baking powder or did you use baking soda, because that would definately make a difference in the taste.
