Introduction
This is a great low-cal summer salad great with any meal. Juicy and tasty! This is a great low-cal summer salad great with any meal. Juicy and tasty!Number of Servings: 6
Ingredients

1 cup sliced, peeled cucumbers
2 cups largely diced tomato (vine tomatos are best)
1 large onion wedged
1/4 cup olive oil
3/4 cup Distilled white Vinegar (white wine vinegar works too)
salt and pepper to taste
Directions
Combine all ingredients in tupperware or covered bowl. Shake container to mix well. This is best served after it has set for about an hour in the fridge. All the juices will mix together. We sometimes serve this with whole wheat Italian bread for dipping in the liquid. Whole wheat Italian bread is not included in the nutrition info.
This should make about 6 servings. 3/4 cup for single serving.
