Introduction

This is a great low-cal summer salad great with any meal. Juicy and tasty! This is a great low-cal summer salad great with any meal. Juicy and tasty!
Number of Servings: 6

Ingredients

    1 cup sliced, peeled cucumbers
    2 cups largely diced tomato (vine tomatos are best)
    1 large onion wedged
    1/4 cup olive oil
    3/4 cup Distilled white Vinegar (white wine vinegar works too)
    salt and pepper to taste

Directions

Combine all ingredients in tupperware or covered bowl. Shake container to mix well. This is best served after it has set for about an hour in the fridge. All the juices will mix together. We sometimes serve this with whole wheat Italian bread for dipping in the liquid. Whole wheat Italian bread is not included in the nutrition info.

This should make about 6 servings. 3/4 cup for single serving.

    I just made this tonight. I ran out of white vinegar but had rice vinegar and it substituted very well. I enjoyed this very much. May try garlic next time. Yummy! I love tomatoes & cucumbers but family does not, so I may make a smaller batch next time. - 7/8/09

    My mom used to make this as an alternative to green salad, so I have been eating this since I was a child. I use lo cal bottled Italian dressing and have never tried it with the onio, but I will. - 6/9/09
